What are some good, kid friendly recipes using ground beef?

My spaghetti, meatloaf, chili, and hamburgers are getting old. They like all of these dishes, but I'm getting burnt out. I would appreciate some fresh ideas. Thanks.

  1. American goulash, Spanish rice, sloppy joes, tacos, mac and cheese with beef.


  2. 1 pound ground beef

    1 (3 ounce) package Oriental flavored ramen noodles

    1 (14.5 ounce) can diced tomatoes

    1 (10 ounce) can whole kernel corn

    Heat a large skillet over medium-high heat. Crumble in the ground beef, and cook until no longer pink, stirring frequently. Drain off grease.



    Stir in the flavor packet from the noodles, tomatoes, and corn (with their juices). Break up the noodles slightly, and add them to the skillet. Bring to a boil, then reduce heat to low, cover, and simmer for 10 minutes, or until noodles are tender. Stir occasionally to break up any clumps of noodles.


  3. Teriyaki Burgers! Ground beef, teryaki sauce, salt and pepper. Serve them with a slice of cheese on a toasted english muffin, they'll love 'em!

    1lb ground beef

    1 box elbow macaroni, 16oz

    1 jar spaghetti sauce (we like Prego's meat flavored sauce)

    1 can diced tomatos

    12 slices real American cheese (not the processed stuff-it won't melt right)

    Cook the macaroni according to the directions on the box.  Meanwhile, brown the ground beef and drain off the fat.  Once the macaroni is done, add the beef, spaghetti sauce, and tomatos to the pasta.  Heat over medium heat until warm.  Add the cheese in small pieces and stir until completely melted and heated through.  Serve with salt, pepper, and/or Parmesan cheese.  Enjoy!

    1 pound lean ground beef

    1 onion, chopped

    1 (28 ounce) can peeled and crushed tomatoes

    2 tablespoons vegetable oil

    salt to taste

    2 cups instant mashed potato flakes

    1 cup shredded Cheddar cheese

    Heat oil in frying pan. Add chopped onions, and fry until golden brown. Add ground beef, and keep stirring until meat is browned. Add crushed tomatoes, and continue to cook until liquid from the tomatoes evaporates. Salt to taste.

    In the meantime, prepare the mashed potatoes as directed on the packet.

    Spread the meat mixture into the bottom of an oven proof dish. Cover with a layer of mashed potatoes, and top with grated cheese.

    Bake for 10 minutes at 400 degrees F (205 degrees C), or until cheese has melted and browned.

  8. These are my fav's. I know you said you are tires of meatloaf, but you have to try the one I included, its not the traditional recipe. Everyone loves it.

    Porcupine Balls

    1 egg

    ½ cup water

    1 envelope lipton onion soup mix

    1 ½ lbs lean ground beef

    ½ - ¾ cup uncooked minute rice

    1 – 46 oz bottle of Campbell Tomato Juice

    1 tsp sugar

    Beat egg slightly with water and 2 tbs soup mix. Mix lightly with beef and ¼ cup of rice. Shape into large meatballs (1 ½ to 2 inches). Roll in remaining rice, pressing it lightly into the meatball. Use more rice if needed.

    Heat tomato juice to boiling. Stir in remaining onion soup mix and sugar. Place meatballs in sauce and cover. Simmer, stirring several times for 50 minutes.

    Serving suggestions:  Great with a vegetable or salad and rolls.

    Sweet & Sour Meatballs

    1 lb ground beef

    1 tsp garlic salt

    dash pepper

    1 sml can pineapple (optional)

    1 can or jar sweet & sour sauce (I like the Contadina brand, but any will work)

    Combine first 3 ingredients. Make into meatballs, 1 to 1 ½ inch wide. Place in shallow casserole dish and bake in 350 F oven, for 20 minutes. Drain of grease. Bake for 10 more minutes. Drain again. Pour sauce over meatballs and bake for 15 minutes. Serve over rice. Makes 2-4 servings.

    Meatballs & Sour Cream (Stroganoff)

    1 lb ground beef

    1 tsp garlic salt

    dash pepper

    1 cup water

    1 package lipton onion soup mix

    1 - 8 oz  carton sour cream

    1 package wide egg noodles (cooked according to package directions), drained

    1 tbs butter (add to cooked noodles)

    Add salt and pepper to ground beef, mix well. Form ground beef into 1-1 ½ inch wide meatballs. Brown in skillet. Pour off grease. Add soup mix and water. Cook 20 minutes, stirring occasionally. Turn off heat and add sour cream. Serve over noodles.

    Stuffed Bell Peppers

    3 bell peppers, halved and blanched

    4 slices bacon

    1 cup chopped onion

    1 lb ground beef

    ½  tsp garlic salt

    ½ tsp paprika

    2 cups cooked rice

    ½ cup catsup

    ½ cup spaghetti sauce

    Saute bacon, add onion, add ground beef and brown. Stir in remaining ingredients. Place peppers in a shallow casserole dish. Fill bell peppers, cover and bake at 350 F for 40 minutes. Remove cover and top with spaghetti sauce, bake for 10 minutes longer, uncovered.

    Taco Ring

    1 lb ground beef

    1 package taco mix

    8 oz cheddar or jack cheese

    2 pkgs crescent rolls

    Brown beef, drain of grease and add taco mix and water, according to

    directions. When done add cheese and mix together until melted. Remove from heat and set aside.

    Preheat oven to 350 F. Take crescent rolls and place each triangle on a greased cookie sheet, overlapping with the long point facing out in a circle. Taking a spoon or ice cream scoop, scoop up some of the ground beef mixture and place spoonfuls on the widest part of the ring all the way around. Take the points and fold them over and tuck them in under the wide part, covering part of the beef mixture. Bake for about 15-20 minutes or until brown. Serve slices with chopped lettuce, tomatoes, shredded cheese, sour cream, and salsa.

    Moms Sweet & Sour Meatloaf

    Sauce:

    2 small cans tomato sauce

    1/4 cup Worcestershire sauce

    1/2 onion chopped

    1 tablespoon dried parsley

    1/2 cup brown sugar

    Mix all sauce ingredients together in bowl, set aside.

    Ingredients (Meatloaf):

    2 pounds ground beef

    1/2 chopped onion

    1 egg, beaten

    1/2 cup or more if needed, quick oatmeal (not instant)

    1 teaspoon garlic salt

    In another bowl add ground beef, 1/2 chopped onion, egg, oatmeal, garlic salt, pepper, and 1/3 of the sauce mixture. Mix together well.

    Place in pan, making space between meat and pan around edges with fingers. Flatten top, spread more sauce over top and cook 1 hour, at 350F. Drain off grease half way (30 min) and add more sauce. Reserve some sauce for adding when served. The oatmeal disappears, is healthy and you can't taste it. It just holds it together better. Add more if you need it.

    Minestrone Soup

    Ingredients:

    1 lb hamburger

    1 c chopped onion

    1 t minced garlic

    1/4 tsp Pepper

    1 can beef or broth

    2 cans water

    3 tsp beef soup base (heaping)

    1 1/2 tsp Italian seasoning OR

    1/2 tsp EACH fresh oregano, basil, sage, rosemary, and thyme.

    16 oz Can whole tomatoes, broken into bite sized pieces

    8 oz can kidney beans, un-drained

    1 1/2 c sliced carrots

    1 c frozen green beans or 2 zucchini, chopped

    1 c frozen lima beans or corn

    1 can of garbanzo beans (chick peas)

    Brown hamburger, onion, garlic and pepper. Add rest of ingredients except macaroni.  Cook for at least 20 min add macaroni and cook until macaroni is done.

    Or

    Easy and good. In a large pot add tomato juice and water to make a veggie broth. Add chopped onion, zucchini, carrots, celery. Add canned kidney beans- rinsed. Add a bay leaf or two, celery salt (optional),and pepper. Precook your favorite pasta in another pot. Rinse and add to soup pot. Discard bay leave

    Ingredients:

    1 pound ground beef

    1/2 cup chopped onion

    1 1/4 cup milk

    3 eggs

    1 1/2 cup shredded cheddar cheese

    1/2 cup buttermilk baking mix

    1/4 teaspoon garlic powder

    1/2 teaspoon salt

    1/4 teaspoon pepper

    1 thinly sliced tomato

    Directions:

    Place beef in colander over bowl in microwave. Cook till no longer pink. Discard grease, add onion, and pour into a 10" pie plate which has been sprayed with Pam. Combine other ingredients. Pour over meat mixture. Cook in 350 F oven till set, 30-40 minutes

    How to Make Kid Friendly Lasagna

    Instructions

    Difficulty: Easy

    Things You’ll Need:

    1 pound of lean ground beef

    1 26 oz. can of Hunts Four Cheese spaghetti sauce

    1 26 oz. can of Hunts Garlic & Herb spaghetti sauce

    1 pound Velveeta cheese, cubed

    6 “no boiling required” lasagna noodles

    Step

    1. Preheat oven to 375.

    Step

    2. In a large skillet, cook ground beef over medium heat until no longer pink. Drain.

    3. Add can of Garlic & Herb spaghetti sauce and half of the can of Four Cheese spaghetti sauce to the ground beef. Stir well and heat through.

    4. In a greased 13-in. x 9-in. x 2-in baking dish, spoon in half of the meat sauce. Top the meat sauce with three noodles. Cover the noodles with half of the cubed cheese.

    (Please note: the cubed cheese will not completely cover the noodles. This is fine because the cheese will spread while baking.)

    5. Now spoon the rest of the meat sauce over the cheese. Add three more noodles and cover the noodles with the rest of the cheese.
