What are some good, quick low fat recipes for a single female on the go?

I mean I like to cook and all, but I dont have a man just yet to be throwing down in the kitchen for. Plus I work all day so I dont wanna spend a whole bunch of time in the kitchen. But everything quick seems to be high in fat, and a girls gotta watch her shape :-)

Anyone can suggest some delicious low fat recipes for me? B-fast, lunch, dinner, and desert.

  1. I can give you a lunch one.  Turkey deli meat, veggies of your choice (I like carrots, cukes, spinach and sprouts) with hummus wrapped in a pita.


  2. Search cook Ellie Krieger at foodnetwork.com or weight watchers.com.  Quick, delicious and healthy.  Enjoy!

  3. I love portabello mushroom sandwiches. They are pretty fast, at least I think. You grill the mushrooms (or you can cook it in a pan) with balsamic vinagerette, and when it is still warm, place it on a bun with feta cheese, and grilled red peppers and onions. This is great for lunch or dinner.

  4. Food Network has a whole section dedicated to heathly eating. There are some really good recipes there, they also have a quick and easy section.

  5. Creamy Fettuccini Alfredo

    1 – 8 oz. Package Philly Cream Cheese (I use the light version – 1/3 less fat), cubed

    ¾ cup (3 oz.) fresh grated Parmesan cheese (I like De Giorno, don’t use Kraft)

    ½ cup margarine (I use I Can’t Believe It’s Not Butter Light)

    ½ cup milk or half and half (I use 1% or 2% low fat)

    8 oz. fettuccini, cooked, drained (I use the fresh Contadina low fat one)

    In large saucepan, combine cream cheese, Parmesan cheese, margarine and milk.

    Stir over low heat until smooth. Add to drained fettuccini and toss lightly. Sprinkle with fresh Parmesan cheese if desired. Makes 4 servings.
