  1. Baked Lasagna

    1 onion, minced

    1 clove garlic menced

    1 lb ground beef

    2 teaspoon shortening

    1 medium can whole tomatoes

    1 can tomato sauce

    1 teaspoon oregano

    1/4 teaspoon pepper

    1/2 lb lasagna noodles

    2 1/2 quart boiling water

    1/2 lb sliced mozzarella cheese

    1 cup cream cottage cheese

    1/2 cup cheddar cheese

    Saute onion, garlic, and meat in shortening about 20 minutes. Add next four ingredients. with 1 tsp salt. Simmer for 40 minutes. Cook noodles with 1 tbsp salt for 20 minutes; drain. Put 1/3 meat mixture in baking dish. Add layer of noodles, add 1/2 cottage cheese, 1/3 Mozzarella, and 1/2 Cheddar. Repeat layers, ending with remaining meat mixture and top with remaining 1/3 Mozzarella cheese.

    Cioppino

    24 clams or mussels*

    1 tablespoon corn starch

    3 small lobsters; or

    3 dungeness crabs; cracked

    1/2 cup olive oil

    2 cloves

    1 minced garlic

    2 chopped onions

    6 chopped green onions

    3 chopped ribs of celery

    1 chopped green bell pepper

    1 teaspoon chopped fresh thyme

    1 bay leaf

    2 cup chopped fresh tomatoes

    1 can plum tomatoes

    2 cup red or white wine

    1 teaspoon crushed fennel seed

    1 good sized pinch saffron

    1/4 cup chopped parsley

    1 salt and pepper to taste

    32 small cleaned shrimp

    2 lb red snapper; cut into pieces

    1 clove garlic

    1 teaspoon anchovy paste

    * cleaned and scrubbed SOAK CLAMS OR MUSSELS IN A LARGE POT OF COLD WATER with corn starch. Drain several times in cold water. Clean and cut into pieces lobsters or crabs. Crack as needed. Heat olive oil in a large pot and add cloves; garlic, onions, celery, bell pepper, thyme, bay leaf, tomatoes, wine, fennel seed, saffron, parsley and salt and pepper. Cook 5 minutes. Add shrimp and snapper, cook, covered, stirring once, for 5 minutes. Mash in 1 clove garlic with anchovy paste and stir into stew. Cook 5 more minutes.

THEN TAKE YOUR COTTAGE CHEESE -ADD IN AN EGG AND SOME GRATED PARMESAN CHEESE AND MIX IT ALL UP AND GET ABOUT FOUR CUPS OF SHREDDED PROVOLONE CHEESE, A BOX OF LASAGNA NOODLES AND START LAYERING IT ALL AND MAY SURE WHEN YOU GET TO THE TOP LAYER YOU POUR ALL THE REST OF THE SHREDDED CHEESE. NOW BAKE IT AT 350 DEGREES FOR ONE HOUR ! LET IT SET AND WHEN YOU ARE READY TO SERVE SPRINKLE A LIL' PARMESAN ON TOP !
