  1. Wrap potatoes and corn individually in foil (put a few holes in the foil) and put in near/under the fire.  Delicious.  Should take about 45 minutes I think.  You don't put in direct contact with the flame, but under or near--you can use stones as a buffer.

  2. Chicken Foil Dinner

    Serves One:

    1 chicken breast

    1 potato

    1 carrot

    1/4 onion, optional

    Seasoning: salt, pepper, ...

Wash, peel, and dice the vegetables. Cut the chicken into strips and place on foil wrapper. Season chicken and add vegetables as desired.

Fold foil into a flat package sealed well. Place the dinner on coals.

Cook for 15 minutes, then flip and cook 10 more. Unwrap and check one dinner to see if they are done. Make sure the chicken is white and firm, completely done, before eating.

  3. You can certainly do this one. Prepare at home up to the point where you put them in foil and put them in your cooler for cooking in the fire. If you have a mature fire pull some coals to the side and lay the chicken packets on top of the coals. I would probably cook for about 45 mins.

    Baked Stuffed Chicken Breast

4 boneless skinless chicken b*****s, fat removed

    1/2 small yellow onion, sliced

    4 lemon slices, rind removed

4 small garlic cloves, peeled and sliced

4 Tbs ranch, ceaser OR italian dressing

3 Tbs olive oil (seasoned is good)

    4 1/4" slices real butter

    salt and pepper

Cut a deep slit in the side of each chicken breast to create a pocket in the center.

Carefully insert 1 slice butter, 1 lemon slice, a few pieces of an onion slice (not the whole slice just a few pieces) and 1 of the sliced garlic cloves. Salt and pepper the b*****s.

Over medium high heat in a skillet brown the b*****s in the oil for 2 minutes on each side.

Remove the b*****s and place them on sheets of foil large enough to wrap them.

    Preheat oven to 350F

Coat one side with 1 Tbs of your choice of the salad dressing and wrap the chicken with the foil.

Put chicken breast packets on a roasting pan and bake for 30-45 mins depending on the size of the b*****s. Do not turn them.

Remove from oven carefully open the foil and let stand for 2 mins.

Serve with baked potato and dinner salad.

    MMMM Good!

  4. white corn on the cobb... de-husk, add four ice cubes per cobb with three tbsp butter or marg. seal tightly with heavy duty foil, turn often over med coals for 40 min. it's so good when the kernels turn slightly to way brown ;-)

  5. I can't see it working very well, it is unlikely they would heat evenly.

You would be far better to invest in some kind of cooker and equipment at a Camping Store.

  6. In a packet, put slices of onion, bellpepper, some garlic, S&P, and any type of meat: hamburger patty, pork chop, chicken breast, beef steak.  Make sure meat is seasoned.  Top meat w/ ketchup, BBQ sauce or steak sauce ( if you like), and seal up well.  Toss on fire and leave there at least 30 min, flipping every 10 min or so.  Use heavy duty alum foil.

You can do a separate packet w/ diced potatoes (dice small, so they cook quickly) w/ copped onions, S&P, garlic..... maybe a strip of bacon, chopped up, or a couple tsp of butter.... again, about 30 min, flipping every 10 min or so.

You can also do dessert: firm banana, thinly sliced apples or peaches, brown sugar, butter... maybe a handful of oatmeal... dash of cinnamon and salt... MmmM!

  10. You don't want to lug chicken and potatoes into the woods. It's too much dead-weight. Just kill a bear and eat that. It's like god's take-out.

  11. O we love tin foil dinners in our family! we make them on the grill all the time. We usually use hamburger patties for ours. but, we have done them with chicken too. we call them hobo dinners. What we do is cut a large rectangle of foil, but the meat whatever kind on the foil. Then drizzle it with  Worcestershire sauce followed by some poultry or grill seasoning. Make sure you have plenty of peeled potatoes and cut them up similar to thick french fries. Then, you pile on all sorts of good things depending on what you like. we use potatoes, cherry tomatoes, green beans, corn, baby carrots, and onions. Then we top it with sliced onions and a whole jalapeno. You can do any combo of these things, my brother only like meat and potatoes in his! then you put a little garlic powder on top of all of this with two large pats of butter. Then you fold up the sides and roll it down. you can write names on them depending on who wants what in their packet. use a permanent marker. Now, depending on how many packets you have, you will need to move then around on the fire. putting each one in the hottest place for about fifteen minutes. just keep moving them around so they all cook evenly. it will take about an hour for them to fully cook. for dessert, the classic smore works great for camping. Just take a marsh mellow and roast it. Throw it on some chocolate between two pieces of graham. if you need some recipes that work well being non refrigerated, just e-mail me. i have tons of pasta salas recipes that can be prepared before you leave that will stand up to the camping trip. Hope this helps!!!!

    Campfire Potato Packets~

    Ingredients;

    6 large baking potatoes

    1 large onion, chopped

    4 ounces green chiles

    4 ounces black olives, chopped

    1/4 teaspoon garlic powder

    1/2 teaspoon lemon pepper

    Butter or margarine (optional)

Scrub and chop baking potatoes into pieces, but do not peel. Prepare 6 to 8 square pieces of heavy-duty aluminum foil, one piece per serving. Place equal portions of the ingredients on each foil square. If butter or margarine is available, place one teaspoonful on top of each packet. Fold the foil, sealing ends. Place on barbecue grill or in coals of campfire for about 45 to 55 minutes.

    CHOCOLATE ECLAIRS - CAMPFIRE COOKING

1 pkg. (8) Pillsbury Quick Crescent Rolls

2 individual snack size vanilla puddings

1 "Ready to Spread" can of chocolate frosting

4 (6x6) squares of aluminum foil

4 (1 to 1 1/4 inch) diameter aluminum tent poles or green sticks with the bark peeled for 6 inches on end

Wrap the aluminum foil TIGHTLY around end of pole or green stick. If hollow, tuck into end.

Form dough of crescent roll around foil to make a tubular shape - cook slowly - rotating often over a low campfire of hot coals until brown.

Remove from end of foil and fill with 2 tablespoons of vanilla pudding. Spread prepared frosting on top. Eat carefully - you will not believe you are camping. Recipe feeds four.

    CAMPFIRE POPCORN

Mix popcorn kernels with enough oil to coat well. Place a few tablespoons of oiled popcorn on a large square of extra heavy duty aluminum foil. Bring corners of foil together and tie with a piece of string at the top. Tie string onto a stick and hold over the fire until the corn pops. Punch a hole in the foil to let steam escape before opening.

    Packet Dinners for the Campfire

These ideas also work well in the oven (instructions follow).

Oriental Chicken: Place 1 boneless, skinless chicken breast sliced in strips and 1 cup frozen vegetables in center of foil. Combine 2 teaspoons soy sauce, dash garlic salt, sprinkle cayenne pepper (optional) and 1 tablespoon brown sugar. Drizzle over chicken and vegetables, wrap.

Breakfast Nest: Prepare one thin sausage patty made from lean country sausage, place on foil; add 3/4 to 1 cup frozen hash browns creating a nest in center; add one egg to the nest; wrap. Sprinkle with grated cheese just before serving.

Glazed Ham: Place one carrot thinly sliced or cut into thin julienne strips on foil, salt and pepper to taste; place 1/2-inch slice of ham on top carrots; place a slice of pineapple on ham; drizzle with 1 tablespoon honey, wrap. Try substituting sliced sweet potato for the carrot.

Ranch Chicken: Dip one boneless, skinless chicken breast in melted butter then in 1 packet Ranch dressing mixed with 3/4 cup corn flake crumbs and 3/4 cup grated Parmesan cheese, place on foil. Add sliced strips summer squash and bell peppers, wrap. Sprinkle with grated cheese just before serving. (NOTE: One packet dressing mixed as above will coat 4 to 6 chicken b*****s.)

Baked Apple: Slice apple in half, remove core creating a hollow in center of the apple. Place a tablespoon of brown sugar in hollow, sprinkle with cinnamon, and dot with butter. Wrap.

Orange Cupcakes or Muffins: Slice top off orange and scoop out the pulp leaving the rind intact (eat the pulp). Prepare cake or muffin mix; fill orange hollow 3/4 full with mix. Wrap.

Traditional Foil Dinner: Place thin hamburger patty in center of foil. Add thinly sliced carrots, potato cubes, and rings of onion, salt and pepper to taste, wrap. Sprinkle with grated cheese just before serving.

Seasoning Variations: Try one or more of the following in the savory packets: garlic salt, season salt, lemon pepper, 2 or 3 tablespoons cream mushroom soup, Italian seasoning, BBQ sauce, sprinkle Worcestershire sauce, chili powder, curry, steak sauce, etc. (experiment).

    Foil and Cooking Tips:

Use heavy-duty aluminum foil, place shiny side in, spray with nonstick spray to prevent sticking.

Create foil packets by wrapping foil around food using a drug-store wrap: Use foil 3 times the width of the food. Fold sides up creasing foil at edge of food. Keeping edges together, make a 1/2- to 1-inch fold and crease. Fold 2-3 times – leaving enough room in packet for food expansion and steaming during cooking. Smooth ends flat, make four small triangle folds on each end from edge of food to the edge of foil. Fold ends of foil in using 1/2-inch folds.

Cooking in conventional oven – preheat to 450 degrees F. Place prepared packets on cookie sheet in center of oven.

Cooking on stove top – preheat skillet with lid on medium heat. Reduce heat to simmer, place prepared packet in ungreased pan, cover with lid and cook 7 to 10 minutes on one side, turn and cook 5 to 10 minutes on second side.

Cooking times vary, depending upon size of food pieces and the type of food – most dinners require 15 to 20 minutes.

Turn packets half way through cooking process, using oven mitts or leather gloves. Note - tongs tend to puncture packets.

All ideas create one packet dinner
