  1. Broccoli casserole is good. Just use some frozen or fresh broccoli, cream of mushroom condensed soup, bread crumbs, and cheese. Combine the broccoli, some breadcrumbs (or crushed crackers) and soup together and spread it out in a casserole dish. Then top with cheese and more bread crumbs. This is one of my ALL TIME favorite foods. I'm sure you can find a complete recipes at allrecipes.com.


  2. Honestly the best is steamed broccoli, but you can also add melted cheddar when it's done to give it a twist.

    Also, if you want to spice up the flavor a little bit, I recommend adding Nature's Seasoning. It's great on just about anything from French fries to broccoli.

    And if you're a little more of a sweet tooth, add a sweeting packet for ever 1 lb. of broccoli your cooking.

    (remember not to add the cheese until you're done steaming it, too. Just reminding you.

    Also, to give it a fresher taste, use something to keep it from touching the water at the bottom and only cook until able to cut with a fork. You want to keep it a light green color to hold the nutrients in. If it's turned a dark olive color than you've gone too far.  

  3. Summer Broccoli Salad

    2 large bunches raw broccoli, cut into flowerets

    1 lb. bacon, cooked and crumbled

    2 c. grated Cheddar cheese

    1/2 sweet onion, finely chopped

    1/2 c. sugar

    2 tbsp. wine vinegar

    1 c. mayonnaise

    Mix mayonnaise, sugar and vinegar together. Add onion, bacon and cheese. Pour over broccoli in 9 x 13 pan. Stir until broccoli is lightly coated. Chill a few hours.



      




  4. Veggies and Chicken in Cream Sauce

    "This is a creamy chicken and vegetable dish that can be served with rice, pasta or tortilla breads."

    INGREDIENTS

    4 skinless, boneless chicken breast halves, cut into bite size pieces

    1 red onion, sliced in rings

    salt and pepper to taste

    4 fresh mushrooms, sliced

    1 yellow bell peppers, sliced

    2 cloves garlic, chopped

    2 teaspoons chopped fresh cilantro

    1 pinch crushed red pepper flakes

    1 (16 ounce) container sour cream

    1 tablespoon sweet pickle relish

    DIRECTIONS

    In a large skillet, fry the chicken pieces and onion rings in hot oil until browned. Salt and pepper to taste.

    Add the sliced mushrooms and bell pepper and continue to saute for 5 minutes over medium heat.

    Add 1/2 of the garlic, 1/2 of the cilantro and 1/2 of the pepper flakes and stir until mixed.

    Add the other 1/2 of the garlic, cilantro and chile flakes, then add the sour cream and mix well. Add the hamburger relish and saute for another 5 to 10 minutes. Let cool and serve.

    Sauteed Broccoli

    Ingredients:

    1 lb. fresh broccoli

    3 Tbsp. extra virgin olive oil

    2 cloves garlic, minced

    1 tsp. lemon juice

    salt and pepper to taste

    Preparation:

    Cut the broccoli into individual florets. Cut stems into pieces roughly the same size as the florets. Place broccoli in large pot, and bring to boil in salted water to cover. Reduce heat and simmer 3-4 minutes until broccoli is just crisp-tender. Drain thoroughly. Heat olive oil in a skillet over medium heat and cook garlic for 1 minute. Add the drained broccoli and cook 5 minutes, stirring frequently, until broccoli is glazed and tender. Sprinkle with lemon juice, salt, and pepper and serve. Serves 4 to 6.

    Broccoli Marinara

    Ingredients:

    2 tablespoons olive oil

    1 (14.5 ounce) can diced tomatoes with balsamic vinegar, basil and olive oil

    1 pound broccoli florets

    2 cloves garlic, chopped

    salt and pepper to taste



    DIRECTIONS

    Heat olive oil in a large skillet over medium heat. Add garlic, and cook for a few minutes, stirring constantly. Pour in the tomatoes with their juices, and simmer until the liquid has reduced by about 1/2. Place the broccoli on top of the tomatoes, and season with a little salt and pepper. Cover, and simmer over low heat for 10 minutes, or until the broccoli is tender. Do not over cook the broccoli, it should be a vibrant green. Pour into a serving dish, and toss to blend with the sauce before serving.

  10. Broccoli Salad

    1 head of broccoli

    1 cup grated cheddar

    1/2 cup cooked crisp bacon bits

    1 cup mayo mixed with 2 tbsp. vinegar and 1 tbsp sugar

    1 red onion

    Chop broccoli

    Blend well

  11. Okay the best thing I have ever done with broccoli is deep fry it.

    Combine water and a little salt in a large saucepan. Heat to boiling. Cook broccoli until it is a little tender. (Don't completely cook it.) Drain and rinse in cold water. Combine 4 large eggs and a 1/2 a cup milk in a bowl. Coat the broccoli. Mix 1/4 cup flour, salt and pepper. Dip broccoli in batter. Heat 2 to 3 inches of oil in deep fryer at 375 degrees, dip a few pieces of broccoli in batter. Fry 1 to 2 minutes until golden brown. Drain and serve.

    If you don't have a deep fryer use a pot. It will work the same. You can do this with squash or zuchinni, anything will work.

    Another thing I like to do is melt cheese on top of steamed broccoli.
