I just got 2 bags of apples..Im wondering what are some good apple recipes?

  1.    What about a Maple Apple Crisp?   Take your peeled, cored and sliced or chunks of apples and place in a baking dish that has been sprayed with vegetable spray.  Sprinkle with cinnamon or apple pie spice.  Then get your favorite maple syrup and drizzle all over the apples.  In a bowl combine quick cooking oatmeal, brown sugar, cinnamon and flour.  Sprinkle a very good coating over the apples then drizzle with liquid butter.  Bake in a preheated 350 degree oven for about 30-40 minutes or until bubbly and apples are done.

    If you have friends or family who can't have sugar , this can be a fantistic desert for them.  Just use Splenda Brown Sugar and Sugar Free Maple syrup(Log Cabin is my favorite).

    A big dollip of Cool Whip or a big scoop of Vanilla Ice Cream and BAM what a dessert.


  2. Apple Chutney

    Serve this with crusty bread and mature Cheddar cheese for a great ploughman's lunch.

    Ingredients

    1.4 Kilogram Apples, peeled, cored, diced (3 lb)

    1.4 Kilogram Onions, chopped (3 lb)

    450 Gram Sultanas, or seedless raisins (1 lb)

    2 Lemons, zest and juice

    700 Gram Demerara (1 1/2 lb) sugar

    600 ml Malt vinegar (1 pint)

    Method

    Makes 2.7 kg (6 lb)

    Put the apples, onions, sultanas, lemon zest and juice, sugar and vinegar in a preserving pan.

    Bring to the boil, then reduce the heat and simmer, uncovered, stirring occasionally, for about 3 hours, until the mixture is of a thick consistency, with no excess liquid remaining.

    Spoon the chutney into prepared jars and cover immediately with airtight and vinegar-proof tops.


  3. Easy Apple Cake

    Yield: 5 Servings

    4 x Apples, peeled and sliced

    1/4 c Sugar

    1/2 ts Cinnamon

    1/2 c Sugar

    2 tb Soft Butter or Margarine

    1 x Egg

    1/4 ts Vanilla

    1 c Flour

    1 ts Baking Powder

    Preheat oven to 350 deg F.

    Mix together 1/4 cup sugar and 1/2 t cinnamon. Place a layer of apples in greased baking dish (approximately 5" x 9" x 3"), sprinkle with half the sugar-cinnamon mixture, cover with remaining apples and cover with remaining sugar-cinnamon. Cream 1/2 cup sugar and butter. Add egg and vanilla and mix well. Stir in flour and baking powder and spoon over apples, spreading it as best as you can.

    Bake 30 minutes Best served warm, with vanilla ice cream.

  7. Apple Strudel

    These are fun to make (and delicious). Working with phyllo can start out frustrating, but once you learn you can just patch it up - all is well in the world ;-)

    Servings: Makes 2 small strudels.

    1/2 cup fine dry bread crumbs

    7 1/2 tablespoons unsalted butter

    1 1/2 pounds tart apples, such as Granny Smith, peeled, quartered, and sliced thin crosswise

    1/3 cup granulated sugar

    1/2 cup raisins

    1/2 teaspoon cinnamon

    twelve 17- by 12-inch sheets of phyllo, stacked between two sheets of wax paper and covered with a dampened kitchen towel

    confectioners' sugar for dusting the strudels

    fresh unsweetened whipped cream for serving

    In a small skillet cook the bread crumbs in 1 1/2 tablespoons of the butter over moderate heat, stirring, until they are golden and transfer them to a large bowl. To the bread crumbs add the apples, the granulated sugar, the raisins, and the cinnamon and toss the mixture well. On a work surface arrange an 18-inch-long-piece of wax paper with a long side facing you, cover it with 1 sheet of the phyllo, and brush the phyllo lightly with some of the remaining butter, melted. Layer 5 more sheets of the phyllo over the first sheet in the same manner, brushing each sheet lightly with some of the melted butter, and mound half the apple mixture evenly along the long side facing you, leaving a 2-inch border at each end. Using the wax paper as a guide and rolling away from you, roll up the strudel tightly and, with the seam side down, fold the ends under to enclose the filling. Transfer the strudel carefully to a lightly buttered jelly-roll pan and brush it with some of the remaining melted butter. Make another strudel with the remaining phyllo, melted butter, and apple filling in the same manner and transfer it to the jelly-roll pan. Bake the strudels in the middle of a preheated 375°F. oven for 35 to 45 minutes, or until they are golden, and let them cool to warm in the pan on the rack. The strudels may be made 1 day in advanced and kept covered loosely at room temperature. Reheat the strudels in a preheated 400°F. oven for 15 minutes. Transfer the strudels with slotted spatulas carefully to serving platters and dust them with the confectioners' sugar. Serve with whipped cream.
