Either types of cheese or brand names would be great.

  1. Tofutti's cheese is completely vegan.

  2. ~ All real cheeses are made from some part of an animal be it from the rennet, casein  or milk that is used.

There are now cheeses made with vegetable rennets or Micobia rennets that are vegetarian but not vegan. No animal parts just the milk from an animal.

Vegetable rennet is a misnomer given that the definition of rennet recognizes it strictly as an animal derived substance. Although cheese has been made using enzymes from the Lady Bedstraw, Stinging Nettle, and Thistle flower, the term vegetable rennet is most commonly used when describing enzymes produced using microbes. "Vegetable rennet" is sometimes used more generally to describe any non-animal rennet.

Microbial rennets are enzymes derived from a controlled fermentation of a fungus (e.g., Mucor Pusillus, Mucor Miehi, and Endothia Cryphonectria) or microbial rennets. However, microbial rennets cannot be used to produce cheddar or hard cheeses, limiting their application as an alternative to animal or bioengineered rennets.

You can find these cheeses at Whole foods, natural grocers and specialty cheese shops.

The only vegan "cheeses" are made from tofu and canola oil and do not taste or act like real milk cheese.

  3. I'm not sure what you mean by "other animal parts."  If you mean slaughter by-products, look for Tillamook cheeses in your grocery store.  They are regular dairy cheeses, but they label on the side of the package that they use vegetable rennet, making their cheeses suitable for vegetarians.

If you're referring to any animal products at all (i.e. vegan cheese) there aren't many that are very good (in my opinion, anyway!)  Follow Your Heart's Vegan Gourmet is decent.  It melts under the broiler, so you can make pizza, for example.
