Question:

What are some good chicken or beef recipes made for 2 servings?

I usually find a recipe for 6 servings, and while it's usually not incredibly difficult to cut everything by a third, I don't know how to use 1/3 of an egg, or measure 1/16th of a tsp. Any recipes that are made for only 2 servings?

  1. This says that it's 4 servings, but with my husband it's actually 2. He LOVES it--I have to make it at least once a week I substitute the vegetable oil with extra virgin olive oil so it's not as greasy and bad for you! It's also good if you just fry the b*****s up whole and serve with green beans or another vegetable.

    Fried Chicken Salad



       2 whole skinless, boneless chicken b*****s (about 2 1/2 pounds)

       2 cups all-purpose flour

       2 teaspoons salt

       1 1/2 cups ranch dressing

       1/2 cup milk

        1 large egg

       1 teaspoon Tabasco sauce, or to taste

       1/2 cup plus 1 tablespoon vegetable oil

       1 head romaine lettuce, shredded

       1 pint cherry tomatoes, halved

      

    1. Place each chicken breast in a plastic bag and pound flat (about 1/2 inch thick). Cut into thin strips.

    2. In a shallow bowl, mix the flour and salt. In a medium bowl, whisk 1 cup of the ranch dressing with the milk, egg and Tabasco sauce.

    3. Working in batches, dredge the chicken strips lightly in the flour, dip into the ranch batter, then coat with flour again and transfer to a sheet of wax paper.

    4. Heat 3 tablespoons of the oil in a large nonstick skillet over medium-high heat until rippling hot. Add enough chicken strips to cover the bottom of the pan. Fry until golden and cooked through, about 3 minutes on each side. Transfer the chicken to a paper towel-lined plate. After the first batch, discard the oil, wipe the pan clean with a paper towel and heat another 3 tablespoons of oil. Fry the remaining strips, using fresh oil for each batch.

    5. In a large bowl, toss the lettuce and tomatoes with the remaining 1/2 cup of ranch dressing, or to taste. Divide among 4 plates and top with the chicken strips.

  3. Lemon Chicken Scallopini with Pasta

    Easy breezy.

    Dredge 2 chicken b*****s in seasoned flour and fry in canola oil until browning.  Does not need to be cooked through. Put in oven at 325 to reserve and continue cooking.  Meanwhile, start the pasta of your choice.

    In a medium sauce pan, melt 2 tablespoons butter, 1 tablespoon olive oil, 2 chopped garlic cloves or a tablespoon garlic, s&p, and some dried herbs (parsley, basil, oregano, whichever you wish).  Once melted, add in 1/4 cup white wine (optional).  Let simmer for 3 mins on low/medium.  Add in juice of one lemon.

    ***Add in capers if you like them.  Add in diced tomatoes if you like them.

    Mix 1/4 cup gently warmed heavy cream and 1/2 tablespoon corn starch.

    Add mixture to sauce and let gently simmer for another few mins.

    Check chicken b*****s.

    Serve sauce over chicken and pasta.  Garnish with fresh chopped parsley and parmesan cheese.

    INGREDIENTS:

    3 tablespoons olive oil

    2 pounds chicken b*****s, skin removed and cubed

    For beef for two, why not try a nice grilled steak? Maybe add grilled onions and mushrooms, or maybe this great monkey gland sauce (no worries, no monkeys invlved):

    1 onion, sliced

    1 teaspoon turmeric

    2 teaspoons garam masala  

    3 teaspoons curry powder

    3 garlic cloves

    1½" fresh ginger, grated

    8 ounces skim milk

    4 large tomatoes, chopped

    Large tub fat free yoghurt (plain) - optional  

    Preparation:

    Saute chicken in oil until golden.  

    Remove from pan, leave to rest in a separate bowl.

    Add onions, saute until golden.

    Stir in turmeric, garam masala and chilli powder. Roast in pan for 1 minute

    Return chicken to pan, stir mixture to coat chicken evenly.

    Blend together garlic, ginger milk, and add to pan with tomato and three tablespoons of water.  

    Cover and simmer for 30 minutes.

    Remove chicken and keep warm.  

    Bring cooking liquid to the boil and reduce by half.

    Place chicken on a suitable serving dish, spoon reduced sauce over.

    Serve with yoghurt on the side, if desired.

    1/4 cup lime juice

    1 tablespoon olive oil

    4 chicken pieces

    1/2 teaspoon salt

    1/2 teaspoon pepper

    1/4 cup mushroom, sliced sauteed in

    butter

    Directions

    1In small bowl, combine lime juice and olive oil.

    2Dip each chicken part in mixture, covering completely. On foil-lined baking pan, arrange chicken in single layer; sprinkle with salt and pepper.

    3Arrange oven rack at least 6-inches from heat and set temperature to broil.

    4Broil chicken about 15 minutes; turn and pour remaining lime-oil mixture over chicken. Broil about 15 minutes more, until fork can be inserted into chicken with ease.

    5Pour mushrooms over chicken and return to oven for about 2 minutes, until mushrooms are hot.

Shish Kebob is a great meal for just two servings.  There is really no recipe there.  You just cube some chicken and marinate it in whatever you choose.  I like to marinate in lemon juice, lemon zest and olive oil, then you cube some bell pepper, onion and/or whatever veggies you like, skewer them and grill them.  I prefer a charcoal grill.  Try this website:

    A great stir-fry recipe is:

    1tsp fresh grated ginger

    1tbsp Lite Soy Sauce

    1tsp Fresh Lemon Juice

    Punch Red Pepper Flakes

    1/2 Red Bell Pepper Chopped

    1 cup broccoli florets (cut them up really small - practically remove all of the stems)

    1 large chicken breast finely sliced

    1/2 Cup Red Onion

    **Any other veggies you want are fine (Snow Peas)

    Use a touch of oil in the pan (maybe a tsp or tbsp) to prevent sticking,

    Toss Chicken in Bowl with Lemon Juice, Soy Sauce and Red Pepper Flakes

    Cook until no longer pink

    Add veggies and cook them to desired tenderness.

    If you want more flavor, taste as you cook (after chicken is thoroughly cooked of course) and add more soy sauce or lemon juice to suit your palette.

    I make these all the time for my boyfriend and I.  Hope you like them as well!


  7. Chicken breast enough for two. Cut up into pieces and fry. Add rice and a veg all enough for two. Saute until hot. This is healthy and you really dont need to measure. You can go by sight on all these ingredients on how much you need for two.

    Parmesan crusted chicken:

    1/4 cup mayo

    1/8 cup grated parmesan cheese

    2 Tablespoons Italian bread crumbs

    2 chicken b*****s

    Preheat oven to 425°.

    Combine mayonnaise with cheese in medium bowl. Arrange chicken on baking sheet. Evenly top with mayonnaise mixture, then sprinkle with bread crumbs.

    Bake 20 minutes or until chicken is thoroughly cooked.
