I think cotopaxi national park is close to the Pan American Highway - about 2 hrs south of Quito.  You can take a short detour to tambopaxi lodge.www.tambopaxi.com, and eat and sleep at the foot of cotopaxi, the highest active volcano in the world..these spectacular views must be worth a detour!!
