What are some good diet recipes. im talking 200 - calories and below.

i dont like fish either. and it would be nice to have something i could cook at the same time i am cooking dinner for my boyfriend. i.e. im making him fried chicken... i could make mine baked... ?? thanks!

  1. This is a sweet and salty, low fat dessert.

    Cantaloupe Delight

    Ingredients: The seeds of half a cantaloupe

    2 Tablespoons of cantaloupe juice

    2 Tablespoons of extra virgin olive oil

    Low-fat Vanilla Bean ice cream(or frozen yogurt if you prefer it)

    Salt and Sugar

    Cooking Directions: Heat oven to 375 degrees. Scoop the seeds out of the half of a cantaloupe, and wash the extra bits of "goop" off leaving only a little of the cantaloupe "goop."

    In a skillet heat the two tablespoons of extra virgin olive oil over medium to medium-high heat then add the seeds in.

    Generously sprinkle salt with only a pinch of the sugar over the seeds.

    Stir the seeds in the pan for 4 minutes until lightly browned. Remove the heat and place seeds on a cookie sheet. Sprinkle salt over the seeds. Place in oven for 8-9 minutes. Remove the seeds from the oven. Put desired amount of ice cream in a dish and pour the two tablespoons of cantaloupe juice over on top. Then, put the seeds on top of the ice cream to finish your sweet and salty treat!

    It sounds odd, but is easy, fast, and delicious!

  2. A great side dish: Cut zucchini into large cubes. Simmer them in a pot with diced tomatoes (I use canned tomatoes) until it;s all softened. Sprinkle with parmesan cheese. It's delicious and really low in calories.
