What are some good excursions to do on the Varadero side of Cuba?

Tropicale and Havanalo have give you excellent suggestions.  I would just add don't miss Havana, most tourists will say it is the highlight of their vacation.

In Veradero i suggest going to Havana a couple of days or bring a book because it like a ghost town at night.

I recommend to pay a visit of one or two days to Havana. If you go for one day buy a package deal at the travel desk in your hotel. The advantage : everything is included (guide, travel, meals etc). Making the trips on your own is more expensive.

In Havana are many tourist attractions :

The Capitolio, Partagas cigar factory, cathedral, castle El Morro, the Hemingway trail, National acuarium, Plaza de la Revolucion, Tropicana etc etc.  To visit all the important attractions you need more than one

week.

There is a lot for you to do. You can go to the Dolphinarium and swim with the dolphins.

There are many museums and natural parks as well...Josone Park is in that area.

Trinidad, Santiago de Cuba, Cienfuegos AND Havana are all around you.

There are the Escambray Mountains (Sierra del Escambray) as well.
