haha it seems like i'm always hungry, and i just don't know what to eat! we've probably got all the ingredients there and need some good general food ideas please :)

ps. i don't eat meat...lol sorry - goodluck

  1. lol have some salads, potatoes, veges, tomatoes etc


  2. Make a vegetarian pizza!! :-)

  3. Make a muffin pizza. Just top it up with some sun dried tomatoes or any other tomato base ( for pizza) , then add some mushrooms, olives, grated cheese etc. You can make different variations.

  4. Spanikopida... it is so good all you need is garlic, spinach,  black pepper, salt, and frozen spinach.  Mix it all up and fold it up into phylo dough that is brushed in butter.  Check out www.allrecipes.com they have really great recipes!

  5. I am an always hungry type too. I try to eat healthy (mostly organic food), so I snack frequently. My snacks include almonds, wheat cracker, cheese and salami, wheat nutrition bars (from health food store) and banana. To be not hungry you don't have to consume massive amounts of food at one time. Eating often is good too. Just depends on how fast your body burns food.

    Spinach and Strawberry salad

    INGREDIENTS

    2 bunches spinach, rinsed and torn into bite-size pieces

    4 cups sliced strawberries

    1/2 cup vegetable oil

    1/4 cup white wine vinegar

    1/2 cup white sugar

    1/4 teaspoon paprika

    2 tablespoons sesame seeds

    1 tablespoon poppy seeds

    DIRECTIONS

    In a large bowl, toss together the spinach and strawberries.

    In a medium bowl, whisk together the oil, vinegar, sugar, paprika, sesame seeds, and poppy seeds. Pour over the spinach and strawberries, and toss to coat.

    VEGETARIAN CHILI

    2 lbs. dried kidney beans

    8 carrots

    4 stalks celery

    8 oz. mushrooms

    1 lg. can tomatoes, cut up

    2 onions

    2 cloves garlic

    1 tbsp. cumin (more or less to taste)

    1 tbsp. oregano

    2 tsp. black pepper (more or less to taste)

    Hot pepper flakes can be substituted for the above, if desired

    Olive oil (optional)

    Soak beans overnight and cook according to package directions. Rinse. Set aside. Saute garlic and onions, in olive oil, if desired. Cook until onions are transparent. Add all other vegetables and spices. Cook until tender. Combine with beans and add canned tomatoes. Simmer until flavors are well mixed.

    NOTE: You can use any type of dried beans or combination of vegetables that you like.

    ^^ I'd replace the kidney beans for black beans, but that's just me!

    Blueberry Coffee Cake Muffins

    12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature

    1 1/2 cups sugar

    3 extra-large eggs, at room temperature

    1 1/2 teaspoons pure vanilla extract

    8 ounces (about 1 cup) sour cream

    1/4 cup milk

    2 1/2 cups all-purpose flour

    2 teaspoons baking powder

    1/2 teaspoon baking soda

    1/2 teaspoon kosher salt

    2 half-pints fresh blueberries, picked through for stems

    Preheat the oven to 350 degrees F. Place 16 paper liners in muffin pans.

    In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar until light and fluffy, about 5 minutes. With the mixer on low speed, add the eggs 1 at a time, then add the vanilla, sour cream, and milk. In a separate bowl, sift together the flour, baking powder, baking soda, and salt. With the mixer on low speed add the flour mixture to the batter and beat until just mixed. Fold in the blueberries with a spatula and be sure the batter is completely mixed.

    Scoop the batter into the prepared muffin pans, filling each cup just over the top, and bake for 25 to 30 minutes, until the muffins are lightly browned on top and a cake tester comes out clean.

    BASIC VEGETARIAN SPAGHETTI SAUCE

    2 (16 oz.) cans stewed tomatoes, do not drain

    1 (32 oz.) can tomato sauce

    1 (12 oz.) can tomato paste

    1 tbsp. sugar

    2 cloves garlic, pressed

    2 tbsp. olive oil

    1 lg. onion, chopped

    1 green pepper, chopped

    2 tsp. basil

    2 tsp. oregano

    2 tsp. Italian seasoning

    1/4 tsp. black pepper

    1 shake chili powder

    1 tsp. salt

    1 lb. fresh mushrooms, sliced

    Saute onion and green pepper in olive oil until onion is clear. Add remaining ingredients. Simmer 2 to 3 hours.

    ^^ Put this over your favorite pasta!

    Guacamole

    3 Haas avocados, halved, seeded and peeled

    1 lime, juiced

    1/2 teaspoon kosher salt

    1/2 teaspoon ground cumin

    1/2 teaspoon cayenne

    1/2 medium onion, diced

    2 Roma tomatoes, seeded and diced

    1 tablespoon chopped cilantro

    1 clove garlic, minced

    In a large bowl place the scooped avocado pulp and lime juice, toss to coat. Drain, and reserve the lime juice, after all of the avocados have been coated. Using a potato masher add the salt, cumin, and cayenne and mash. Then, fold in the onions, tomatoes, cilantro, and garlic. Add 1 tablespoon of the reserved lime juice. Let sit at room temperature for 1 hour and then serve.
