What are some good foods to order at a french restaurant?

I'm going to France and I have no clue what food to have, but I'll try anything once and I am already planning to try es cargo. Please help. Please include what the food is like. A short description is fine. Thank you.

  1. croque  monsier, sooo good, ham sandwich with chevre cheese but they make it so delicious.

    Mussels with fries, try this restaurant called Leon de Bruxelles on the Champs de elysees, all they do is mussels, yummy!


  2. why Ratatouille of course!! It's actually quite good if you like a medley of cooked vegetables stewed (no meat)

    Moules Frites (mussels and fries) is popular for lunch, there are restaurants that specialize in it. The mussels are cooked in a white wine sauce and the juices get on your fries and give them a lovely flavor.

    Bouillabaisse the best fish soup you'll ever try ..comes with little croûtons you put a paprika/garlic mayo on and sprinkle with gruyere (swiss cheese).

    Salade de Chèvre Chaud. A simple bed of salad with pine nuts and a vinaigrette on top of which you place warm goat cheese baked on top of French bread on top.

    Chestnut cream Crepes... you can get those ofs stands spread out across the city ... it's to die for.

  3. Galettes

    They're savoury crepes filled with all sorts of meats, fish, veggies, cheese, etcetera.  The one I liked best was a Galette au saumon fume (smoked salmon crepe) with cream.  

    Coq Au Vin

    Rooster cooked in wine, with ham and vegetables and sometimes brandy.  The sauce is very rich and tasty.  

    Cassoulet

    A rich stew of beans, sausage and other meat.  

    Ratatouille

    A French veggie stew, very rich, tomatoey and delicious.  A nice change from all the pork and cheese you get in France.  

    My friends and I had a lovely tarte a l'oignon (onion tart with bacon and cream), and very good crepes with hazelnuts, almonds, and creme fraiche from the roadside creperies.  Classic tarte tatin (apple) is sweet and yummy.  Try some bread and wine while you're there (if you're old enough), and try the escargots as you promised.

  4. FOIE GRAS, best food ever. In France even better. Its force fed duck liver, ignore the description and just try, its like dying and going to heaven!!!!

  5. I love coquilles st jacques if it is made properly.  

    That is scallops and mushrooms cooked in white wine cream sauce.  It is served in the shell and swiss cheese is melted on the top.  

    For mine I pipe mashed potatoes with lots of cheese around the shell - so the shell holds more and the potatoes pushed into the sauce are really good.  

    It should be creamy and not gummy with a nice blending of fish stock (it's not too fishy because it is from the scallops) wine and cream.

    I also love steak au poivre.   Very nice tender steak with green peppercorns cooked in butter.   It is flamed with cognac and the drippings thickened with a bit of cream.  It is like a very rich dark brown pepper gravy.  Eat it rare.

  6. Foie gras...it takes a bit getting used to.  

    Crepes are delicious!  I would save some room for dessert, if I were you, because the French make really great desserts.  And of course you'll want to sample all the breads and pastries.

  8. Depends on how posh the restaurants you want to go to...

    Duck confit can be very good in traditional cooking places.

    Of course, if you go to the kind of places that serve escargot (outside of Burgundy), you might be more interested in sole meunière (sole fish in brown butter sauce) or stuff with truffles or morel mushrooms.

    Be careful for bouillabaisse or ratatouille... those are definitely from the Provence area, and you'll have to go to fairly upscale places to get them real good. Same thing goes for galettes... those are such a staple and Breton stereotype that it's easy to stumble on not very good ones.

    Croque monsieur on the other hand is bar food and realy hard to do bad... unless they use really bad ham and cheese, of course.

  9. Ris de veau au madeira is sweetbreads of veal in madeira wine sauce. DELICIOUS.
