What are some good menu items or daily specials for a bar and grill. i just became kitchen manager(1st time)?

  1. A Bruschetta plate is one of my favorite things at a local restaurant. Four different pieces of grilled bread with four different toppings, can change daily, sometimes a white bean spread (white beans, garlic, lemon juice, olive oil) maybe an artichoke and white cheddar spread, hummus, olive tapenade, goat cheese and herbs, tomato and fresh mozz or feta cheese with curry. Simple and delicious, quick as a lunch special and you can clean out the fridge, to boot.

    A "grilled cheese of the day" would be creative. Figure out 6-8 different ones and serve with soup of the day or salad. Caramelized onion and gruyere, Fresh mozz with pesto and tomato, Brie with apple and ham, sauteed mushroom and swiss, etc.

    I also saw a recipe on Plate.com for a beer-battered burger. Yes, a deep-fried burger. Yum.

    Also, a nice composed salad like a nicoise, and if you can't get fresh tuna, some nice fresh salmon is also good. (Nicoise  is tomatoes,  cooked and chilled potatoes, hard boiled eggs, cooked and chilled green beans, fresh greens tossed, in my preference, in a fresh herb viniaigrette--tarragon or chervil being my herb of choice, served with a piece of either grilled or poached tuna [traditional] or salmon and garnished with olives, nicoise olives are traditional but I like kalamata.

    Go to Plate.com and register, they have a lot of great ideas, although some are more exotic than others.

I love a burger or steak with Blue Cheese.  The restaurant we went to today use to have it on their menu and it was not on there today.  I was so disappointed.  I think a pasta would be nice for a daily special.  You could also pick one night a week to have a wing special.  That brings the drinkers in and you will make a lot of money even if you have the wings pretty cheap.

  3. For appetizers Bruschetta, Lettuce Wrap, Onion Rings and Calamari seem to be popular.

    For entrees just about everyone likes chicken.

    How about Chicken with different sauce/flavor everyday?

    Like Thai chicken with peanut sauce, Hawaiian with pineapple, Teriyaki with snowpeas, Italian Marsala, spicy Mexican Fajita  etc.

    If you are near water, fresh seafood special makes sense.

  4. Boneless chicken kabobs? lots of good easy marinades, they can be served cold and with salads,,etc lime-bbq-sweet or reg terriaki-chicken is just so fast and easy, but if your a cook, you know what I mean!
