What are some good places to eat in Nassua, St. Thomas, and St. Martins?

Looks like you might be making a cruise ship visit. If so, that really affects the trip because of the ridiculous amount of time that they allow.

Can't comment on Nassau and STT, as we've never spent overnights there and usually eat on ship.

We've done a number of overnights in SXM but have also visited off a cruise ship. Stuck with the brief time off a ship, we normally take a taxi and do a beach day at Orient. Plenty of restaurants on the beach and in Orient Village. A lot of Americans like Baywatch. Near the Club O end of the beach and run by some interesting folks from NJ. IMO, more american fare than typical St. Martin cuisine. Happy hour at the Perch Bar at Club O is from 12:30 - 1:30. 2 for 1 drinks that you can order and drink sans clothing...

If you want a more authentic "St. Martin" experience, get ribs at one of the lolos (locally-owned locally-operated outdoor grills) dash it with a little Matouk's sauce and wash it down with a cold Carib or two. Available all over the island but our favorite is Talk of the Town in Grand Case. Beach vendors at Cupecoy, Baie Rouge, and Mullet usually have cookers going. Mark's at the roundabout or Lee's at Simpson Bay are also good and little more upscale.

Tony Bourdain's "Cook's Tour" featured Hilma's  Windsor Castle a couple of years ago. Check out  the salt fish, johnny cakes, and "Dutch coffee".  Near the Simpson Bay Bridge, very limited seating.

Lots of gourmet dining, especially in Grand Case but with the decline of the dollar, the French side is not that affordable anymore. Ask about the exchange rate before you dine. Some restaurants will give you a break if the transaction is in cash.

All these places are doable off a cruise ship but a lot easier if you have a car and especially if you are staying several days.
