What are some good recipes for fruit/vegies on the grill?

I'm looking for some new ideas to prepare fruits and vegetables on a charcoal grill. I've recently started experimenting more with indirect heat and different kinds of wood chips in addition to other seasonings and glazes. I love to cook and I love to eat. If you share this joy, please share a couple of your favorite recipes. Thank you.

  1. Just about everyone will agree that Bell Peppers of all Colors are absolutely amazing on the grill, toss in some Onion(Sweet, Yellow)

    toss it all in a basket and you can grill on the open flame. Olive oil will help get that flavor to really shine. As for fruit omg, You should take peaches cut in half depit, Cover exposed innerds with Brownsugar/sugar mix to carmelize while bbqing them, Also a favorite is to take a whole pineapple and cut into 4 long strips, then grill till they have the BBq look. and serve.. All the fruits will be so tender and juicy. the pineapple loses all that tart it normally carries. so its absolutely sweet.


  2. Kebabs

    Cut all fruit and veg uniformly (so they all cook at same time)

    Thread on skewers, if wooden pre-soak to avoid burning

    Brush with favourite marinade

    Grill.

  3. cut the gapefruit into halves then damp demarara sugar grill till the sugar turn to be coated on the flesh of the grapefruit.

    grilled capsicums with balsamic and olive oil and crushed garlic.

    or radichio and aubergines and even yams are good for grill

    or try green mango then blend with sugar and cracked ice

I make "Banana's Foster" on the bbq grill.  Place an unpeeled banana on the grill until it becomes soft (about 10 min.)  Slice it down the center length wise.  Do not cut all the way through and cut on the inside curve.  Open up the banana.  It should resemble a boat.  Place it on a plate and put a scoop of vanilla ice cream in the center.  Make a sauce out of melted butter, brown sugar, Meyer's dark rum and a little vanilla.  Drizzle the sauce over the ice cream.  Serve.

My friend made a grilled vegetable salad that was to die for!  It was very simple.  He cut up some bell pepper, onion, zucchini, broccoli and marinated them in Newman's Own Italian dressing for about an hour.  Then he drained the veggies and put them in a grilling basket very similar to this...

  6. well i put asparagus on the grill and wait until you have black slash brownish lines all around the asparagus. and i love the grilled slash burnt taste it is so delicious.

  7. I really like to cut big chunks of potatoes, peppers (red, green, and orange), red onion, and carrots and put them in some tinfoil with a little bit of an Italian dressing/olive oil vinaigrette. You leave them on the grill until they're tender. It's SUCH an easy side dish.

    FoodNetwork has a lot of really good recipes for grilled pizza and grilled desserts.

  8. Cinnamon Grilled peaches

    Glaze-equal parts butter, brown sugar & Grand Marnier, & 1 pinch salt. Simmer the glaze on stove top.

    Cut peach into half, de seed it. Cut each half in half again.

    Skewer 1 peach quarter with cinnamon stick, add a mint leaf, add another peach quarter. Use a skewer if needed to ease cinnamon stick on.

    Put on grill (outside grill, or george foreman). Put peaches on grill & baste with glaze.

    Cook about 4-6 min per side. Turn when they begin to get brown. MAy baste again.

    Another idea,skewer the peaches with vanilla beans instead of mint leaves for another flavor.

    <note> I didn't put the lid down on the george to make this, I kept the lid up!

    Cinnamon Grilled Peaches

    BBQ U Season 1, Stick Food Episode

    Method: direct grilling

    Serves 4

    4 large ripe freestone peaches

    8 cinnamon sticks

    8 fresh mint leaves

    1/2 stick (4 tablespoons) unsalted buttter

    1/2 cup brown sugar

    1/2 cup dark rum

    1/2 teaspoon ground cinnamon

    a pinch of salt

    1. Cut the peaches in half, running the knife in a circular motion around the peach to the stone. Twist the halves in opposite directions to separate them. Pop out the stone with a spoon and discard. Cut each peach half in half. Using a pointed chopstick or metal skewer, make a starter hole in the center of each peach quarter (from outside to pit side). Skewer two peach quarters on each cinnamon stick, placing a mint leaf between each.

    2. Prepare the glaze. Combine the butter, sugar, rum, cinnamon, and salt in a saucepan and boil until thick and syrupy, 5 minutes.

    3. Set up your grill for direct grilling and preheat to high. Brush and oil the grill grate.

    4. Grill the peaches until nicely browned on both sides, 3 to 4 minutes per side, basting with the bourbon butter. Serve at once. Peach or vanilla ice cream makes a great accompaniment.


  9. Pineapple is great grilled--brings out all the sweetness.  

    As far as vegetables I love grilling a whole red onion, red, yellow, and green peppers, zucchini and yellow squash.  Just sprinkle olive oil over the veggies and a lemon citrus dry seasoning.  Oh so good!!!
