  1. Mini Chocolate Lava Cakes

    1 ½ cups semisweet chocolate chips

    1 stick butter

    1/2 teaspoon vanilla extract

    1/2 cup sugar

    3 tablespoons flour

    1/4 teaspoon salt

    4 eggs

    butter cooking spray

    1 tablespoon cocoa powder

    8 strawberries, cut into slices- optional

    Preheat the oven to 375 degrees F.

    Microwave the chocolate and butter in the bowl for 2-3 minutes or until melted . Stir in vanilla.

    In a large mixing bowl, combine sugar, flour and salt. Sift these into the chocolate and mix well with electric hand mixer. Add eggs one at time, fully incorporating each egg before adding the next. Beat at high until batter is creamy and lightens in color, approximately 4 minutes. Chill mixture for at least 2 hours.

    Coat the top and each cup of the muffin tin with cooking spray. Dust with the cocoa powder and shake out excess. Spoon mixture into pan using a 4-ounce scoop or ladle. Bake for 10 to 11 minutes. Outsides should be cake-like and centers should be gooey. To remove: flip over tin onto a hard surface covered with wax paper. Top with strawberries.

    *If serving, melt ½ cup of semisweet chocolate chips and then drizzle over muffins; sprinkle with powdered sugar.

    Here is one of my favorites.

    Old world Manicotti

    12 large manicotti shells

    4 cups shredded mozzarella cheese, divided.

    2 cups ricotta cheese

    6 Tablespoons chopped fresh basil, or 2 Tbsp dried basil

    1 (26 ounce) jar prepared spaghetti sauce, divided

    1/2 cup grated Parmesan or Romano Cheese

    1. Preheat oven to 350 f. Spray 13x 9 inch baking dish with non-stick cooking spray.

    2. Cook pasta according to package directions. Drain; rinse with cool water. Let pasta dry on paper towels.

    3. For filling, in medium bowl, stir together 3 cups mozzarella with the fresh basil and ricotta. Using a teaspoon, carefully stuff pasta shells with prepared mixture.

    4. Spoon 2 cups spaghetti sauce into prepared baking dish. Arrange stuffed pasta over sauce. Pour remaining spaghetti sauce over top of pasta. Sprinkle with remaining mozzarella.

    5. Bake 15 minutes. Sprinkle with the Parmesan; bake for 10 minutes longer. Serve Immediately.

  3. Peanut Butter Cupcakes

    "Peanut butter lovers can double their pleasure with these tender treats from Ruth Hutson. The Westfield, Indiana baker uses the popular ingredient in the cupcakes as well as their creamy homemade frosting."

    INGREDIENTS

    1/3 cup butter or margarine, softened

    1/2 cup peanut butter*

    1 1/4 cups packed brown sugar

    1 egg

    1 teaspoon vanilla extract

    2 cups all-purpose flour

    2 teaspoons baking powder

    1/2 teaspoon salt

    1/4 teaspoon ground cinnamon

    3/4 cup milk

    FROSTING:

    1/3 cup peanut butter*

    2 cups confectioners' sugar

    2 teaspoons honey

    1 teaspoon vanilla extract

    3 tablespoons milk

    Method

    1) In a mixing bowl, cream the butter, peanut butter and brown sugar. Beat in egg and vanilla. Combine the dry ingredients; add to creamed mixture alternately with milk. Fill paper-lined muffin cups two-thirds full.

    2) Bake at 350 degrees F for 26-30 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

    3) For frosting, cream peanut butter and sugar in a small mixing bowl. Add the honey and vanilla. Beat in enough milk to achieve a spreading consistency. Frost cupcakes.


  4. Lamb Loin Chops.

    8 lamb chops (loin or rib) 1-1 ½ inches thick

    2 -3 large cloves garlic, peeled

    2 tablespoons olive oil

    1 ½ tsp finely chopped fresh rosemary or ½ teaspoon dried

    1 ½ teaspoons fresh thyme leaves or ½ teaspoon dried

    ¼ teaspoon salt

    freshly ground black pepper

    Smash garlic cloves, drizzle with a bit of olive oil and salt and chop/grind it until it forms a paste. Scrape into a bowl, add the herbs and pepper and combine thoroughly. Rub the paste over the chops. If possible, cover and refrigerate for at least 30 minutes for the flavours to meld and the chops to marinate.

    Preheat a grill pan or cast iron skillet over medium high heat. Cook the chops for 2 minutes on each side. Reduce the heat to medium-low and cook until desired degree of doneness. Cook about 3 minutes more for medium rare. Exact cooking time depends on the size of the chops.

    Set aside on a cutting board to rest for 5 minutes before serving.
