What are some good recipes using vermicelli bean threads?

Here's the hard part. It needs to be with out meat and as sugar free as possible. I picked them up for my mom and dad cuz they are on a veggiterian, no sugar, no white flour/straches etc... diet. Anything packed with veggies would be the best, specially if the recipe containes a lot of green veggies.

  2. Bean-Thread Noodles with Mixed Vegetables

    You can add whatever veggies you like for this dish. Feel free to add curry powder or Chinese 5 spice powder for a little kick of flavor.

    Serves : 4

    Ingredients :

    5 ounces bean-thread vermicelli

    6 ounces extra firm tofu (bean curd)

    2 tablespoons vegetable oil

    1 tablespoon sesame oil

    2 teaspoons minced garlic

    1 rib of celery, finely sliced diagonally

    1 medium carrot, finely sliced diagonally

    2 eggs, lightly beaten (optional)

    1 whole scallion, trimmed and cut into 1 inch pieces

    1 cup finely sliced Napa cabbage

    1 cup broccoli florets

    1 cup bell peppers (green, red, yellow, orange...) cut in thin strips

    1 small zucchini, cut into small pieces

    1 cup snow peas or sugar snap peas, trimmed

    1/2 cup baby corn, drained well

    8-10 brown mushrooms, halved

    2-3 tbsp low sodium soy sauce

    pinch of crushed red pepper flakes

    salt and freshly ground black pepper

    toasted sesame seeds for garnish

    Method :

    Soak the vermicelli in warm water for 10 minutes or as directed.

    Cut the bean curd into cubes. Heat the veg oil in a wok or skillet over high heat. Stir-fry the tofu with the garlic for 2 minutes until tofu is crisp at the edges. Remove and set aside until needed.

    Add the celery and carrot and stir-fry for 2 to 3 minutes, until they are crisp-tender. Remove all and set aside. Add a little oil to the wok if needed.

    Stir fry the broccoli for a few minutes, remove. Then add the zucchini, stir fry and remove. Add a little oil to the wok if needed. Add the bell peppers, stir fry and remove.

    Add the snow peas (or sugar snap peas), stir fry and set aside. Add a little oil to the wok if needed. Add the mushrooms and stir fry, remove.

    If you plan to use the eggs, add them to the wok. Cook them until they begin to firm up underneath, then turn over and break into small pieces with a wok spatula.

    Add the noodles, scallions, and cabbage to the wok along with the cooked ingredients. Stir-fry on high heat until the cabbage is tender and all ingredients are well blended. Add the soy sauce, sesame oil, crushed red pepper flakes, plus salt and pepper to taste.
