What are some good recipes using very few ingredients?

I have an amazing cookbook that I use for desserts, but the entrees always include a ton of ingredients I don't have, or can't even pronounce. Any ideas on good recipes with few ingredients?

  1. LEMONADE PIE

    1 large Cool Whip, thawed

    1 6-oz can frozen lemonade concentrate, thawed

    1 can Eagle Brand sweetened, condensed milk

    1 9" graham cracker crust

    Mix first 3 ingredients to blend well and put into crust.  Can dollop with more Cool Whip, if you want.  Chill at least 4 hours .... can substitute pink lemonade or limeade concentrate

    CHOCOLATE PEANUT BUTTER BARS

    1 12-oz pkg chocolate chips

    1 c. chunky peanut butter

    6 c. miniature marshmellows

    Melt together chips & peanut butter until well blended.  Fold in marshmellows.  Pour into greased 8" square pan.  Chill.  Cut into squares

    QUICK CHERRY DESSERT COBBLER

    1 tsp. lemon juice

    2 cans cherry pie filling

    2 pkgs. white cake mix

    1 sticks melted butter

    1 c. chopped pecans

    whipped cream for topping

    Add lemon juice to pie filling.  Spread pie filling in bottom of lightly greased 9x13" pan.  Combine dry cake mix with melted butter & nuts.  Sprinkle over pie filling.  Bake at 350 for 40-50 min (until lightly browned).  Top with whipped cream ......Try other combinations like cherry with chocolate cake;  apple with spice cake;  peach with yellow cake

    and I'm not sure if the ingredients of this recipe is too much or not, but this is absolutely delicious;

    5 teaspoons olive oil

    4 shallots, diced

    1 large onion, cut into thin strips

    1 pound bacon, cut into strips

    1 clove garlic, chopped

    1 (16 ounce) package fettuccini pasta

    3 egg yolks

    1/2 cup heavy cream

    3/4 cup shredded Parmesan cheese

    salt and pepper to taste

    Heat olive oil in a large heavy saucepan over medium heat. Saute shallots until softened. Stir in onion and bacon, and cook until bacon is evenly browned. Stir in garlic when bacon is about half done. Remove from heat.

    Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain pasta, then return it to the pot.

    In a medium bowl, whisk together egg yolks, cream, and shredded Parmesan. Pour the bacon mixture over the pasta, then stir in the cream mixture. Season with salt and pepper.

  4. Here's a really good meatloaf recipe that's sort of different from most meatloafs.  It's rolled up and has lots of cheese in it.

    Cheeseburger Meatroll

    1/2 cup finely chopped onions

    1/4 cup water

    1 cup bread crumbs

    salt & pepper to taste

    1 1/2 cups grated cheese

    1 egg

    1 lb lean ground beef or pork

    piece of parchment or waxed paper

    Simmer onion in water for 10 minutes.  Add breadcrumbs and toss. Set aside for later use.

    Beat egg yolk and mix into ground beef with hands and press into a flat rectangular shape on the parchment paper or waxed paper.  Sprinkle with salt and pepper.  Spread the onion and bread crumb mixture over the meat.  Sprinkle with grated cheese, reserving 1/4 cup for the top.  Roll up the meat like a jelly roll, tucking in the ends as you go, so that it forms a fat log.  Squeeze it together so that it's tight and won't fall apart.  Put the rolled up meat into a rectangular pan with the seam side down.  Bake at 350 degrees F for 40 minutes, then remove from oven and sprinkle top with remaining grated cheese.  Return to oven for an additional 5-10 minutes or until cheese on top is melted.  Serve with mashed potatoes & veggies of your choice.

  6. Tater tot casserole

    1-2lbs ground beef or turkey-depends on how many ppl ur serving

    1 can cream of mushroom soup

    1 can cheese soup(cambell's)

    1 bag of tater tots

    1/2 cup of milk

    Preheat oven to 350

    Brown meat and drain fat,combine soups , milk, and salt& pepper to taste. Put meat in 13by 9in pan pour soup over top add tater tots and bake for 45 min

  7. Easy Pineapple Upside Down Donut Cakes

    4 plain cake doughnuts

    6 tablespoons butter

    1/4 cup brown sugar

    1 (4 ounce) can pineapple slices in syrup

    Directions

    Using small ramekins a little bit bigger then your donuts, butter or non stick spray the insides. Sprinkle 1-2 tablespoons of brown sugar and 1 tablespoon of butter on the bottom. Add a pineapple ring and place 2 donuts on top press down with a bottom of drinking glass to get the donuts to stick together in the ramekins. Bake at 350 degrees until brown sugar is melted and bubbly 15-20 minutes. Invert while hot on a plate. Serve when cooled with whipped cream or vanilla ice cream.

    Baskin Robbin's Turtle Pie

    1 chocolate cookie pie crust

    1 quart baskin-robbins praline ice cream

    1 cup caramel sauce

    1 cup pecans

    1.Allow ice cream to sit out long enough to soften, but do not let it melt!

    2.Spread ice cream into crust.

    3.Top with carmel topping, and pecans.

    4.If you want an extra rich flavor cook your pecans in real butter until they become aromatic and roast just a bit.

    Easy Vanilla Cake

    Ingredients

    4 eggs

    1 cup sugar

    1 teaspoon vanilla

    1 cup flour

    1 tablespoon baking soda

    1. get a bowl first put the 4 eggs the vanilla and then the sugar

    2. mix in a blender till thick and creamy.

    3.while the eggs are blending mix flour and baking soda

    4. when the mixture is finished take it out of blender and stir the flour with the baking soda in the bowl.

    5. when that is done take as much of the mixture as posible and put it in the cake pan and then in the oven for 20 min on 450 degree.

    6. when the cake is done cooking wait 10 min for it to cool.

  8. Here is a simple recipe for a casserole you might like:

    Fix a box of Kraft Dinner and after you drain the macaroni, before adding the cheese, add a can of mushroom soup and a can of chunk chicken (I prefer white chicken).  Add the cheese mixture, butter and milk and stir til well mixed.

    It can be made as a casserole or served right out of the pot for a very good one dish meal.

  9. QUICK CARAMEL ROLLS

    1/4 cup butter

    1/2 cup chopped pecans

    1 cup caramel ice cream topping

    2 tubes (8 oz. each) refrigerated crescent rolls

    Place butter in a 13" X 9" baking dish, heat in a 375 degree oven until melted. Sprinkle with pecans. Add ice cream topping and mix well. Remove dough from tubes (do not unroll); cut each section of dough into six rolls. Arrange rolls in prepared pan with cut side down. Bake at 375 for 20-25 minutes or until golden brown. Immediately invert onto a serving plate. Serve warm. Yield: 2 dozen.

    FRUITY ORANGE GELATIN

    1 pkg. (6 oz.) orange gelatin

    2 cups boiling water

    2 cups orange sherbet

    1 can (20 oz.) crushed pineapple, undrained

    1 can (11 oz.) mandarin oranges, drained

    In a bowl, dissolve gelatin in water. Stir in sherbet until melted. Stir in pineapple and oranges. Pour into 1 2-qt. serving bowl. Chill until firm. Yield: 10-12 servings.

    CHOCOLATE BUNDT CAKE

    1 pkg. chocolate cake mix

    1 small pkg. (3.9 oz.) instant chocolate pudding mix

    3 T. baking cocoa

    1 3/4 cups milk

    2 eggs

    2 cups (12 oz.) semisweet chocolate chips

    In a mixing bowl, combine cake and pudding mixes, cocoa, milk, and eggs. beat on low speed until moistened, Beat on medium for 2 minutes. Stir in chocolate chips. Pour into a greased and floured 10-inch bundt pan. Bake at 350 degrees for 55-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack to cool completely. Dust with confectioners' sugar if desired. Yield: 12-15 servings.

    FROSTY FREEZE PIE

    1 pkg. (8 oz.) cream cheese, softened

    1 jar (7 oz.) marshmallow creme

    2 cups raspberry, orange, or lime sherbet, softened

    2-3 cups Cool Whip

    In a mixing bowl, beat cream cheese and marshmallow creme until smooth. Stir in sherbet. Fold in Cool Whip. Pour into crust. Freeze until firm. Remove from the freezer 10 minutes before serving. Pie may be frozen for up to 3 months. Yield: 8-10 servings.

    MILK CHOCOLATE PIE

    1 cup milk chocolate chips

    1/2 cup milk, divided

    1 pkg. (3 oz.) cream cheese, softened

    1 carton (8 oz.) Cool Whip, thawed

    1 chocolate crumb crust (9 inches)

    In a microwave or double boiler, combine chocolate chips and 1/4 cup milk. Cook until chips are melted; stir until smooth. In a mixing bowl, beat cream cheese and remaining milk until smooth. Gradually beat in the chocolate mixture. Fold in Cool Whip. Pour into crust. Freeze for 4-6 hours or overnight. Remove from the freezer 5-10 minutes before serving. Yield: 6-8 servings.

    CHERRY CHEESECAKE--A nice cool recipe that requires NO cooking!

    2 pkgs. (one 8 oz., one 3 oz.,( cream cheese, softened

    1 cup confectioners' sugar

    1 carton (8 oz.) Cool Whip

    1 graham cracker crust (8-9 inches)

    1 can (21 oz.) cherry pie filling

    In a mixing bowl, beat the cream cheese and sugar until smooth. Fold in Cool Whip; spoon into crust. Top with pie filling. Refrigerate until serving. Yield: 6-8 servings.

    EASY BLUEBERRY PIE

    1/2 cup sugar

    2 T. cornstarch

    3/4 cup water

    4 cups fresh or frozen blueberries, thawed

    1 graham cracker crust (9-inches)

    In a saucepan, combine sugar and cornstarch. Stir in water until smooth. Bring to a boil over medium heat; cook and stir for 2 minutes. Add blueberries. Cook for 3 minutes, stirring occasionally. Pour into crust. Chill. Garnish with Cool Whip if desired. Yield: 6-8 servings.

    APPLE CREAM CAKE

    1 pkg. yellow cake mix

    3 cups sliced peeled tart apples

    1/2 cup chopped walnuts

    1/4 cup sugar

    1 tsp. ground cinnamon

    1 cup whipping cream

    Prepare cake mix according to package directions; pour into a greased 13"X9" baking dish. Combine apples, walnuts, sugar, and cinnamon; spoon over batter. Pour the cream over the top. Bake at 350 degrees for 60-70 minutes or until a toothpick inserted near the center comes out clean. Serve with whipped cream or ice cream. Yield: 12-15 servings.

    CHOCOLATE FONDUE

    1 can (16 oz.) chocolate frosting

    1 cup (8 oz.) sour cream

    Combine the frosting and sour cream; spoon into a serving bowl. Serve with fresh fruit for dipping. Refrigerate any leftovers. Yield: about 2 1/2 cups.

    Serve with sliced apples, sliced pears, peaches, oranges, grapes, strawberries.

    QUICK COCONUT CREAM PIE--NO Bake!

    1 pkg. (5.1 oz.) instant vanilla pudding

    1 1/2 cups cold milk

    1 carton (8 oz.) Cool Whip, divided

    3/4-1 cup flaked coconut, toasted and divided

    1 pie shell, baked

    In a mixing bowl, beat pudding and milk on low speed for 2 minutes. Fold in half of Cool Whip and 1/2 to 3/4 cup of coconut. Pour into crust. Spread with Cool whip; sprinkle with remaining coconut. Chill. Yield: 6-8 servings.

  10. A GREAT 2-Bean Salad:

    I know you are thinking, ewww, bean salad.  But, this one is good!

    1 can dark red kidney beans

    1 can chic peas

    1 handful chopped parsley (flat leaf)

    Juice from 1 whole lemon

    1 tsp. garlic salt

    3 tablespoons olive oil

    1 tablespoon chopped garlic

    Toss and eat with pita or toasted pita chips.

    Mmmmmmmmmmmmmmmm.

    And my family loves Buffalo Chicken Quesadillas

    2 boneless chicken b*****s

    1 cup Franks Red Hot

    1 cup mozzarella cheese

    4 flour tortillas (taco size)

    1 bottle of Bleu Cheese Salad Dressing

    Chopped lettuce

    Canola Oil

    ___

    Grill or poach chicken breast, let cool, then dice.

    Toss with Red Hot.

    Use non-stick skillet on low-medium heat, add 1/2 tablespoon or so oil.  Put 2 tortillas in pan, pile on a couple scoops of chicken mix,

    Sprinkle on some mozz. cheese, top with other tortillas.

    Fry until lightly golden, flip, until golden on both sides.

    Cut into 4's.

    Serve with chopped lettuce and Bleu cheese dressing.
