What are some good snack ideas?

a few years ago, when "Survivor" first became so popular, my family would have "Survivor Night" once a week when the show came on, instead of having a regular dinner, we would have a bunch of snacks, like hot wings, cocktail weinies with BBQ sauce, mozzerella sticks, potato skins, etc.

I have since moved far away and don't watch the show anymore, but i would still like to host a snack night once and a while, but i need some new ideas for snacks, instead of having the same things all the time.

any ideas are appreciated, i especially love anything that contains cream cheese.

please dont send me links to websites, i can look those up myself. what i want are ideas that maybe your family or a friend has come up with that turned out really tasty. Things that wont be found in your average search for recipes.

  1. Sweet, Hot, and Sour Meatballs

    Ingredients:

    2 16-ounce packages frozen cooked plain meatballs, thawed (32 meatballs each)

    3/4 cup apple jelly

    1/3 cup spicy brown mustard

    1/3 cup whiskey or apple juice

    1-1/2 teaspoon Worcestershire sauce

    Few dashes bottled hot pepper sauce

    Directions:

    In a large saucepan stir together jelly, mustard, whiskey, Worcestershire sauce, and bottled hot pepper sauce. Heat and stir until jelly melts and mixture bubbles. Add meatballs, stirring gently to coat. Cook for 3 to 5 minutes or until sauce thickens slightly and meatballs are hot and coated.

    To Tote: Transfer meatballs and sauce to a serving dish; cover tightly. Transport in an insulated carrier.

    Cranberry-Barbecue Meatballs

    Ingredients

    2 16-ounce packages frozen cooked plain meatballs, thawed (32 meatballs each)

    1 16-ounce can jellied cranberry sauce

    1 cup barbecue sauce

    Directions 1. In a 3-1/2- or 4-quart slow cooker place meatballs. In a medium bowl combine cranberry sauce and barbecue sauce. Pour over meatballs in cooker; stir to coat.

    Cover and cook on low-heat setting for 4 to 5 hours or on high-heat setting for 2 to 2-1/2 hours. Serve meatballs with toothpicks. If desired, keep warm on low-heat setting for up to 2 hours.

    Makes 64 meatballs

    Cranberry-Chipotle Meatballs: Add 1 to 2 tablespoons finely chopped chipotle chile peppers in adobo sauce to the cranberry-barbeque sauce mixture.

    Mexi-Meatballs: Substitute one 16-ounce jar of salsa and one 10-ounce can of enchilada sauce for the cranberry sauce and barbecue sauce.

    Hawaiian-Sauced Meatballs: Prepare sauce as above, except substitute one 8-ounce can crushed pineapple, undrained, for the cranberry sauce.

    Saucepan variation: In a large saucepan combine thawed meatballs and desired sauce. Heat to boiling; reduce heat. Simmer, uncovered, for 10 to 15 minutes or until heated through, stirring occasionally.

    Antilles's Favorite Cheese Dip

    Ingredients

    1 cup chopped onion (1 large)

    2 tablespoons butter

    1 10-1/2-ounce can chili without beans

    1 10-ounce can chopped tomatoes and green chili peppers

    1 4-1/2-ounce can diced green chili peppers

    1/4 cup picante sauce

    1/2 teaspoon cumin seed or 1/8 teaspoon ground cumin

    1 pound process cheese spread, shredded

    12 ounces cheddar cheese, shredded (3 cups)

    Tortilla chips or large corn chips

    Directions

    In a large saucepan, cook onion in butter about 5 minutes or until tender. Stir in chili, undrained tomatoes and green chili peppers, undrained chili peppers, picante sauce, and cumin. Add cheeses. Stir over medium-low heat until cheeses are melted. (If desired, transfer mixture to a 3-1/2- to 4-quart electric crockery cooker; keep warm on the low heat setting.) Serve with tortilla chips or large corn chips. Makes about twenty-eight 1/4-cup servings.

    Buffalo Wings

    Ingredients

    12 chicken wings (about 2 pounds)

    2 tablespoons butter or margarine, melted

    3 tablespoons bottled hot pepper sauce

    2 teaspoons paprika

    1/4 teaspoon salt

    1/4 teaspoon cayenne pepper

    1 recipe Blue Cheese Dip or Low-Fat Blue Cheese Dip

    Celery sticks (optional)

    Directions

    Cut off and discard tips of chicken wings. Cut wings at joints to form 24 pieces. Place chicken wing pieces in a resealable plastic bag set in a shallow dish.

    For marinade, stir together melted butter, hot pepper sauce, paprika, salt, and cayenne pepper. Pour over chicken wings; seal bag. Marinate at room temperature for 30 minutes. Drain; discard marinade.

    Place the chicken wing pieces on the unheated rack of a broiler pan. Broil 4 to 5 inches from the heat about 10 minutes or until lightly browned. Turn chicken wings. Broil for 10 to 15 minutes more or until chicken is tender and no longer pink. Serve with Blue Cheese Dip or Ranch Dressing and, if desired, celery sticks.

    Makes 12 appetizer servings

    Blue Cheese Dip: In a blender or food processor combine 1/2 cup dairy sour cream,1/2 cup mayonnaise or salad dressing, 1/2 cup crumbled blue cheese,1 tablespoon white wine vinegar or white vinegar, and 1 clove garlic, minced. Cover and blend or process until smooth. Cover and chill for up to 1 week. If desired, top with additional crumbled blue cheese before serving. Makes 1-1/4 cups.

    Low-Fat Blue Cheese Dip: Prepare as above, except substitute fat-free dairy sour cream and fat-free mayonnaise dressing or salad dressing for the regular sour cream and mayonnaise.

    Pizza Quesadillas

    Ingredients

    1/2 cup pizza sauce

    6 7-inch flour tortillas

    2 cups shredded Monterey Jack cheese with jalapeno peppers or Monterey Jack cheese (8 ounces)

    1/3 cup finely chopped pepperoni

    3 tablespoons sliced pitted ripe olives

  3. Oven-Fried Potato Wedges

    3 large baking potatoes

    1/2 cup mayonnaise

    1/2 teaspoon hot sauce

    1/4 teaspoon onion salt

    1/2 teaspoon seasoned salt

    1/8 teaspoon black pepper

    1 cup parmesan cheese, grated

    Preheat the oven to 375 degrees F.

    Wash the potatoes and cut each into 6 thick wedges. Mix the mayonnaise with the hot sauce, onion salt, House Seasoning and pepper. Coat the potato wedges with the mayonnaise mixture and roll them in the parmesan cheese. Place in a greased baking dish and bake for 45 to 50 minutes, or until the potatoes are tender. Serve with your favorite dip.

    MAKE-AHEAD BACON-CHEDDAR STUFFED MUSHROOMS

    6 slices bacon

    16 large cremini mushrooms

    2 tablespoons butter

    2 tablespoons chopped onion

    1½ cups shredded cheddar cheese

    1.  Preheat oven to 400ºF. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown.  Drain, dice and set aside.

    2.  Remove mushroom stems and chop.  Wipe caps with damp paper towel to clean; set aside caps.

    3.  In a large saucepan over medium heat, melt the butter.  Slowly cook and stir the chopped mushroom stems and onion until the onion is soft. Remove from heat.

    4.  In a medium bowl, stir together the mushroom stem mixture, bacon and 1 cup Cheddar. Mix well and scoop the mixture into the mushroom caps.

    5.  Bake in the preheated oven 15 minutes; remove the mushrooms from the oven, and sprinkle with the remaining cheese.  If desired, you can bake 2-3 minutes more to melt cheese.  

    To freeze: wrap baking dish tightly and freeze them before baking in the oven.  A freezer bag would work great for storing these once they are frozen.  Let defrost and then bake as directed above.

    Shrimp Puffs

    10 slices white bread

    2 TbspButter

    1/2 tsp ground thyme

    4 oz devained cooked shrimp, chopped coarsely

    1/2 c. shreadded cheese

    1/3 c. mayonnaise

    1/4 tsp salt

    fresh dill

    Heat oven 400ºF.  

    Trim bread crusts, cut corner to corner

    Melt butter & thyme together & brush on bread.

    Bake for 10 min till brown.  

    Mix shrimp with cheese, mayo, and salt.  Shape into ball, press onto bread.  Broil 5-7 inches from heat source till bubbly

    garnish with dill sprig just before serving.

    Yield:  20 puffs

    Cheese Straws

    2 sticks Parkay

    8 oz. sharp or extra sharp cheese, grated

    2 cups AP flour

    2 cups rice crispies

    1/2 tsp. paprika

    1/2 tsp. cayenne pepper, or more to taste

    1/2 tsp. salt

    Let margarine and cheese stand until room temp. Add  rest of ingredients, and mix all together with your hands. It will be a stiff dough. Roll into small balls, put on ungreased cookie sheet and mash with a fork like PNB cookies, criss-cross.   Bake at 325ºF for about 15 min.

    the spinach things sound kinda gross but theyre really good even if you dont like spinach. =] hope this helped
