What are some good <span title="Italian/Spanish/Portuguese">Italian/Spanish/Portugues...</span> spiced meats or sausages?

I know about Capicola, Pancetta and Prosciutto but what are some other good meats/sausages?

Italian sausage, lamb shank, skirt steak.  It&#039;s not really the meat, but what you do with it that makes it Italian. (except for the ones you mentioned above, those are Italian style deli meats and bacon).  You can make Oso bucco with the shank, Italian sauce you could make a ton of stuff, skirt steak there is this dish whereby you stuff it and let it simmer in red sauce.  I&#039;m only speaking for the Italians....

My Italian mother was fond of Mortadella (Kind of like bologna but with pockets of fat and pistacchio nuts.  Sounds gross but it really is delicious).  Italy is really famous for deli meat.  

Also there&#039;s a variety of salami out there as well as spicy sausages.
