  1. It will be very hard to make a home made doughnut like the ones you buy at the bakery. But this would be what I would try. Add a 1/8  tea  spoon baking powder for each cup of flour

that should give them a little kick when they hit the hot oil. And take a clean dry kitchen towel made from a tight woven fabric and with your hands rub flour into the towel until all the pores in the fabric or filled with flour. Place on sheet pan. Cut doughnuts and place on floured towel

leaving enough room between doughnuts so they will not touch when they have almost doubled in size. When ready to fry pick them up very very gently and place in hot oil @ 350*F to 360*F. You know the rest. I think maybee you aren't handling them gentle enough or you are not letting them rise quite enough, eather one of these 2 things would cause them not to be light and fluffy. I hope this helps you. jim b

  2. When you add the liquid to the flour make it moist enough to be 'sticky'. Turn out on floured pastry sheet. Sprinkle flour on top and slowly kneed the dough adding only enough flour to make it smooth. Place back in bowel and finish as you normally would. To much flour is what makes dough to firm. Hope this helps. God bless and good luck.

  3. Make sure they rise until doubled in bulk before you fry them.

  4. try increasing the baking powder in the recipe.

  5. Rise them fully twice--once after mixing the dough and again till doubled after you've actually cut them out. Here's my trick: put the cut-out donuts on a baking sheet and cover them with a sheet of aluminum foil. Heat your oven to 200 degrees and once it gets there, turn it off. Let your donuts rise in the cooling oven till they're doubled. They'll rise a lot faster in the warmth than if you just set them out on the counter.

Also maybe instead of using a donut cutter, maybe try using a batter dispenser like this one:
