if you can't find vegan, check out any jewish/kosher bakeries.  Often because you can't mix dairy with meats, you can't end a meat meal with anything dairy based.  

Things like matzo meal almond paste cookies, or apricot coconut almond fingers... call around and ask.

Ruggles bakery in Rice Village has some vegan options.

La Baguette 713-520-5475 is one locations number -  281-530-2089 the other of the same name.

La Madeleine bakeries all have vegetarian selections.

Others have shared some that I wasn't aware of.

My suggestion - call up the places near you - and see if they will not make what you are looking for.  They are in business to get customers - and they do indeed want your business.  :)
