What are some good vegetarian main dishes?

A family from our homeschool group is going through cancer treatments, and I am organizing people to bring dinners to them. They are vegetarians and we need help with GOOD recipe ideas! I have looked at alot of websites with recipes but I want to know from vegetarians what are GOOD recipes that you enjoy? I don't want to ask them too many questions because they have so much to deal with as it is! Thanks for your help!!!!

  1. Here is one good veg indian recipe

    Shahi Paneer(Cottage cheese curry)

    Ingredients

        * 250 gms paneer(Cottage Cheese)

          For gravy

        * 4 large tomatoes, chopped

        * 1 onion, chopped

        * 1/3 cup milk or thick cream

        * 1/4 cup curd

        * 11/2 tbsp cornflour, dissolved in 1/2 cup water

        * 1 tbsp tomato sauce

        * 1/2 tsp chili powder

        * 1/2 tsp pepper powder

        * 1/2 tsp garam masala (Mixture of spices like clove, black piper, cinnamon, cardmom etc)

        * 1.5 cm ginger chopped

        * 2 black cardamoms, crushed

        * 1 green chili, chopped

        * 2 tbsp ghee (Milk Fat)

        * 3 tbsp coriander leaves, chopped for garnishing

        * Salt

    Method

        * Cut paneer into finger shaped pieces; deep fry & keep aside

        * Heat ghee, add onions, ginger, green chili & black cardomoms; fry until the onions turn light brown.

        * Add tomatoes, add curd, saute for some time. Remove from heat.

        * When cool, grind to a puree, add water if needed.

        * Add cornflour paste, stirring continuously.

        * Add salt, chili powder, pepper powder, garam masala powder and tomato sauce.

        * Cook till the gravy is thick.

        * At the time of serving, heat gravy, add paneer, add the cream or milk and lastly the coriander leaves.

  2. Fretatta is very good.

    Another idea would be to mix tempeh, black beans, chives, garlic, taragon and some other spices together in a wok, or frying pan.  Just have on six for about five minutes, mix it up some, and wah lah.  I'm not sure if the last one's actually a recipe, but I lvoe it, plus it hardly takes anytime to make.

  3. one sure and easy favorite is spaghetti with "meat sauce".

    Make a simple tomato sauce but instead of meat use dried soy or TVP instead of the ground meat. You can buy this at a health food store. It comes dried in little crumbles. Soak it in hot water for a few minutes until it is soft and then add it while you're frying the onions.Add some peppers or zucchini for some flair. Even meat eaters can't tell the difference!

    Another option is a stirfry with tofu. Just cube firm tofu and throw it in with vegetables.

    Fresh cheese filled ravioli with a simple sauce is great too.

    Lasagna is good too. Do what you always do but use plain tomato sauce and maybe some spinach too. Don't forget the yummy cheese.

    Veggi chilli is easy too. Use the TVP again and add some peppers in with the onions and beans.

    It's all very easy and yummy. In general you can always take a meat recipe, remove the meat or substitute with TVP or tofu and add some extra veggies. I hope it helps you get some ideas.


  4. FALAFELS. their like these meatball shaped things but their made out of chickpeas and other spices and stuff and their GREAT! i eat them on a wrap...
