  3. Zucchini-Rice Casserole

    Serves-6

    Ingredients:

    Water

    Onion 1 Medium chopped

Tomato Sauce 1 can (8 ounce)

    Parmesan Cheese ¼ cup grated

    Zucchini 2-3 or 1 pound

    Cheese (cheddar-Swiss-jack) 2/3 cup shredded

In a sauce pan, bring to boiling, 1 cup water.

In another pan, bring 1 cup of water to a boil.

Place steamer in bottom of the pan.

Add Zucchini and Green Pepper, cover, and turn off burner.

Cook until Zucchini is almost tender (about 3-5 minutes).

Remove from heat and immediately pour into a colander to drain.

When rice is tender and its liquid is absorbed, add Tomato Sauce and Zucchini.

Lightly mix together and turn into a 1-1/2 quart casserole dish.
