Question:

What are some good vegetarian tofu recipes?

My friends are having a potluck dinner and three people attending are vegetarian including myself. so i thought it would be nice to bring some meat substitute, since meat will most likely be the main meal. I was thinkng tofu. I had this kind that was sweet and sour (it was dark brown if that helps) at this Asian resturant where my brother goes to college (he goes to a hippy school so no place around here has it) but it was really good and i have no idea how to make it or where to get the ingredients.

if you have any other ideas please help!

there will probably be salads and other vegies so i just want this as a meat replacement for the vegitarians, and also to try to get the other people to switch!

  1. Tokyo-style Tofu Teriyaki1 Tbsp. (15 mL) vegetable oil*

    -1 cup (250 mL) diced onions, ½-in (1-cm) dice

    -1 garlic clove, minced

    -1 tsp. (5 mL) minced, peeled ginger

    -1 cup (250 mL) diced carrots, ½-in. (1-cm) dice

    -1 cup (250 mL) diced daikon, ½-in (1-cm) dice

    -1 cup (250 mL) diced red and green peppers

    -1 package firm tofu, cut into 1/2-in. (1-cm) cubes

    -1 1/2 cups (375 mL) thick teriyaki sauce

    -1 cup (250 mL) snow peas, cut into 2

    -1 cup (250 mL) soybean sprouts

    -1 Tbsp. (15 mL) chopped coriander or parsley

    Preparation

    In a skillet or wok, heat oil and cook onions, garlic, ginger, carrots and daikon on medium for 5 minutes.

    Add peppers and tofu and sauté 3 minutes.

    Add teriyaki sauce, snow peas, soybean sprouts and coriander.

    Mix, cover and simmer 2 minutes. Serve over rice.

    Suggestion

    Thinly sliced red radishes can be substituted for daikon

    Tofu Burgers-2 packages Sunrise firm tofu, cut into chunks, well drained (at least 20 minutes)

    -1 Tbsp. (15 mL) unsalted butter*

    -1 medium onion, chopped

    -2 Tbsp. (30 mL) chopped green pepper

    -1 1/2 cups (375 mL) whole wheat bread crumbs

    -1/2 tsp. (2 mL) basil leaves, crushed

    -1/2 tsp. (2 mL) each: garlic powder, onion powder

    -1/2 tsp. (2 mL) oregano leaves, crushed

    -1 Tbsp. (15 mL) chopped fresh parsley

    -1 egg, slightly beaten

    -1 pinch pepper

    Preparation

    Preheat oven to 350ºF/180ºC.

    In a big bowl, crush tofu but do not reduce to a purée. Set aside.

    In a skillet, melt butter. Cook onion and pepper until onion is soft.

    Add onion mixture to tofu. Add other ingredients, mixing thoroughly.

    Make 4 thin patties. Place patties on a baking sheet and cook 25 minutes. Turn patties carefully with a spatula and cook another 25 minutes.

    Serve patties in split buns and dress to taste (mustard, lettuce, tomato).

    Tofu Salad1/2 lb. (225 g) firm tofu, cubed

    -1 head romaine, shredded

    -1 green pepper, in strips

    -1 red pepper, in strips

    -1/2 cup (125 mL) chopped celery

    -1 cup (250 mL) sliced mushrooms

    -1 cup (250 mL) sliced zucchini

    -3 clementines, quartered

    Mustard Herb Marinade

    -1 Tbsp. (15 mL) Irresistibles Dijon mustard*

    -3 Tbsp. (45 mL) Irresistibles white wine vinegar*

    -3 Tbsp. (45 mL) chopped fresh herbs (parsley, chives, tarragon)

    -1 clove garlic, chopped

    -1/2 cup (125 mL) Irresistibles extra virgin olive oil*

    -1 tsp. (5 mL) lemon juice

    -Salt and pepper to taste

    Preparation

    In a bowl, combine all the marinade ingredients. Add the cubes of tofu marinate 30 minutes in the refrigerator.

    Remove the cubes of tofu from the marinade and drain. Once marinated, sauté tofu in a frying pan in a butter/oil blend .

    In a salad bowl, lightly toss all the salad ingredients. Put in the tofu's cubes.

    Add a little dressing just before serving.

    Suggestion

    Soy milk has been used to make the Chinese tofu.

    Tofu is often described as a soy paste or a soy cheese. What it is exactly is milk curd which gives it a rather gelatinous texture that can be firm, semi-firm or soft. It tastes very mild and it quickly absorbs the flavour of other foods it is mixed with. It is the versatile food par excellence.

  2. This one is by far the my fave tofu recipe. Simple and really really delicious.

    Vegan Breaded, Fried, Softly Spiced Tofu

    1 (16 ounce) package extra-firm tofu, drained and pressed

    1 1/2 cups vegetable broth or stir fry mix

    3 tablespoons vegetable oil

    1/2 cup all-purpose flour

    1 tbsp vegan marinade powder mix

    1 teaspoon salt

    1/2 teaspoon freshly ground black pepper

    Cut pressed tofu into 1/2-inch thick slices; then cut again into 1/2-inch wide sticks.

    Place tofu in a pan, and pour broth or stir fry mix that was dissolved in 1 ½ cup water over the top. Simmer for 10 minutes.

    In a separate bowl, stir together flour, salt, pepper and marinade powder mix.

    Warm oil in a large skillet over medium-high heat.

    Let tofu get warm until you can tolerate the heat when you touch it, and squeeze most (but not all) of the liquid from them or just tissue the liquid from it.

    Roll sticks in breading. (You may have to roll sticks twice to end up with a fairly dry outer layer of breading.)

    Place tofu in hot oil; fry until crisp and browned on all sides. Add more oil if necessary.
