  1. sausage and bean casserole, just fry some sausages lightly in a frying pan than add to casserole dish with a casserole mix from a sachet, and add a tin of beans, and mushrooms if desired, and its bloody lovely.

    CREAMY CHICKEN AND RICE

    2 bags Success rice

    4 c. chopped chicken

    1 can cream of chicken soup

    1 can cream of mushroom soup

    1 c. sour cream

    1 c. milk

    2 c. grated cheese

    Spread rice in buttered 9 x 13 inch dish. Blend chicken, soups, sour cream, milk, and 1 cup of cheese. Spread over rice and bake for 20 minutes at 350 degrees. Top with remaining cheese and heat until melted. Let sit for 5 minutes before serving.

    Four-Cheese Chicken Alfredo

    1 cup refrigerated four-cheese Alfredo sauce

    1-1/4 cups milk

    2 Tbsp. KRAFT 100% Grated Parmesan Cheese

    1 tsp. parsley flakes

    1/4 tsp. garlic powder

    1 pkg. (9 oz.) refrigerated fettuccine, uncooked

    5 small boneless skinless chicken breast halves (1-1/4 lb.)

    1 cup KRAFT Shredded Mozzarella Cheese

    PREHEAT oven to 400°F. Mix Alfredo sauce and milk in medium saucepan; bring just to boil on medium-high heat, stirring occasionally. Meanwhile, mix Parmesan cheese, parsley and garlic powder until well blended; set aside.

    SPRAY 13x9-inch baking dish with cooking spray. Separate fettuccine noodles; place in prepared dish. Pour Alfredo sauce mixture over noodles; press noodles into sauce to completely coat noodles with sauce. Top with chicken. Sprinkle with Parmesan cheese mixture and the mozzarella cheese.

    BAKE 30 min. or until chicken is cooked through (170ºF). Let stand 5 min. before serving.

    Baked Chicken and Rice

    1 c. plain white rice

    1 large pkg. of chicken pieces (legs, b*****s, leg quarters)

    1 can cream of chicken soup

    1 envelope of dry onion soup mix

    2 soup cans of water

    Directions:

    In a large greased covered casserole, place 1 cup plain ole white rice. No instant, no parboiled, just plain rice. Add a layer of chicken parts. This is great for those weeks when chicken parts are on sale, like legs, b*****s or quarters. Over the chicken and rice, pour a mixture of 1 can cream of chicken soup, 1 envelope of dry onion soup mix, and almost 2 cans of water. Use the soup can to measure. This mixture looks disgusting but that's temporary. Then just put the whole thing, covered, in a 350 oven for AT LEAST 1 hour and 20 minutes. Don't try to shorten it; the chicken will be pink if you do.

    It is very easy to double this recipe, and it doesn't take any longer to cook doubled!! You don't have to stir it, brown the chicken, or any of the other troublesome time consuming things that most recipes ask you to do. Your children will love this, and probably your husband too. If you have more than 2 children, I would definitely

    double the recipe!! Oh, BTW, I did like to remove the skin from the chicken. It looks neater, unless you really like chicken skin.

    Beef and Rice Casserole

    1 lb ground beef (browned and drained)

    2 envelopes brown gravy mix

    Water (as needed on gravy mix package)

    1 c. rice (cooked)

    add onion powder and garlic salt to taste

    Directions:

    Cook rice according to package directions while browning your ground beef (you can also use ground turkey).

    Drain ground beef and add gravy mix and amount of water called for in 2 packages of mix. Stir over medium heat till thickened. Add cooked rice to beef and gravy mixture. Stir together, add salt and pepper to taste.

    Variations:

    Add cooked macaroni or egg noodles instead of rice. Stir in cooked vegetables (broccoli is excellent), mushooms and/or a splash of soy sauce for extra flavor.

    Chili Cheese Cornbread

    2 cans chili w/beans

    Cheese (shredded or sliced)

    1 box Jiffy cornbread mix

    1 egg

    1/3 c. milk

    Directions:

    Spread chili in a greased 8x11 dish. Top with cheese. Stir milk and egg into cornbread mix and spread on top. Bake at 375 degrees or until golden brown and cornbread is done.

    Classic Baked Penne Casserole

    8 ounces of Penne pasta, cooked and drained

    1/2 pound ground beef, cooked and drained (add some spices while cooking if desired)

    1 26-ounce jar of your favorite pasta sauce (or about 3 cups of your homemade sauce)

    2 c. Mozzarella cheese, shredded (you can also add a little parmesan cheese if you have it on hand)

    Parsley, dried or fresh and chopped

    Salt and Pepper to taste

    Directions:

    * Preheat oven to 350 degrees.

    * In a large bowl, mix together cooked pasta, beef, sauce and 1 c. of the shredded cheese.

    * Place pasta mixture into baking dish and cover with lid or aluminum foil. Bake for 30-35 minutes.

    * Take dish out of the oven and remove cover, top with remaining 1 c. of shredded cheese and sprinkle with parsley. Bake for another 8-10 minutes.

    Makes 4-6 servings. This recipe can be double easily and cooked in a 10x13 baking pan.

    Tater-Tot Casserole

    2 lbs. extra lean ground beef

    1 can cream of mushroom soup

    1 (2 pound) bag frozen tater tots

    1 cup grated cheddar cheese

    Directions

    Pat ground beef into bottom of greased 13x9x2-inch pan. Spread soup over meat and cover with grated cheese. Top with tater tots. Bake at 350 degrees, covered for 45 minutes and then uncovered for 15 minutes

    All-in-One Box Dinners

    1 pound chicken b*****s, about 3 large 4 small b*****s (you can get a bag of skinless boneless chicken b*****s for a reasonable price, but its not really that hard to skin and de-bone b*****s which will save you a good bit of money)

    1 small can cream of mushroom soup (or cream of chicken, any variety of creamy soup works but make sure the flavor is one you enjoy because it will be a main taste in this meal--my family likes chicken, mushroom, and celery but cheese and broccoli struck out)

    1/2 cup milk

    1 box stuffing mix (any brand, any variety- I use store brands and whatever kind comes to my hand first)

    1 T. butter or margarine

    1/4 c. boiled water (micro waving the water and butter is convenient - more water for softer stuffing)

    Shredded cheese optional, for appearance

    Directions:

    Prepare a 9x13 casserole dish with cooking spray. Mix milk and soup thoroughly in bottom of dish, place raw, cleaned, de-boned and de-skinned chicken breast in soup mixture, mixture should cover chicken just slightly. In a separate bowl mix water and butter gradually with stuffing mix, stir until moist, put stuffing on top of chicken.

    Cover with aluminum foil. Bake at 350 degrees for 30 minutes or until chicken is done (use a meat thermometer to be sure). Remove foil. Add cheese if desired, and wait until melted, or place back in oven until crispy.

    CREAMY TUNA CASSEROLE

    1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted

    1 soup can milk

    1 can (6 ounces) chunk light tuna

    1/2 package (1 pound) egg noodles, cooked and drained

    1 cup frozen peas

    1/2 cup shredded Cheddar cheese

    1/4 cup grated Parmesan cheese

    Pepper to taste

    1/2 cup crushed butter flavor crackers, optional

    1. In a 2-quart casserole dish, combine soup and milk; blend in tuna. Add noodles, peas, cheeses and pepper; mix to thoroughly combine. Top with crackers, if desired.

    2. Bake at 350º for 30 minutes, or until thoroughly warmed. Yield: 4 servings.

    Breakfast Casserole

    Ingredients:

    4 slices bread

    12 to 16 ounces bacon or sausage, cooked and drained

    2 cups shredded cheddar cheese

    6 eggs, beaten

    2 cups milk

    1 teaspoon dry mustard

    Preparation:

    Grease the bottom of a 9"x13" pan. Tear up 4 slices of bread and place in the bottom of the pan. Sprinkle cooked crubled bacon or sausage over bread pieces. Sprinkle cheddar cheese over the bacon or sausage. Mix eggs, milk and mustard together; pour over casserole. Bake at 350° for 35 to 40 minutes.

    Macaroni and Cheese

    1 3/4 C. elbow macaroni

    2 C. shredded cheddar cheese

    2 1/2 C. milk

    2 T. butter

    2 T. flour

    salt and pepper

    Boil elbow macaroni in salted water about 5 minutes. Drain and rinse. Pasta will not be cooked. Pour into a greased 2 quart casserole. Add cheese and flour. Stir to combine. Pour milk over. Add butter, salt and pepper.

    Bake 35 minutes at 350°F. or until lightly browned.

    Serves 4

    Ham, Apples and Sweet Potato Casserole

    Ingredients:

    1 center slice ham, about 12 to 16 ounces

    3 medium sweet potatoes, about 1 1/2 pounds, peeled and sliced 1/4-inch thick

    2 tablespoons light brown sugar, packed

    4 apples, quartered

    3/4 cup hot water

    Preparation:

    Brown the ham on both sides; place in baking dish. Spread apples and sliced sweet potatoes over ham then sprinkle with brown sugar. Add hot water. Cover and bake at 350° for about 60 minutes, or until tender. Baste occasionally while cooking. Remove cover last 15 minutes.

    Serves 4

    The base can be pasta, rice, potatoes, eggplant, or yams.

    The protein can be ground beef, tuna, chicken, or beans.

    You can add almost any veggies: peas, beans, broccoli, carrots, corn.

    Many different sauces will work: Mushroom, Tomato, Chicken soup.

    Add onions or celery for flavour & texture.

    Toppings can be grated cheese, bread-crumbs, crushed cereal, etc.

    cook ground beef with taco seasoning packet and some onion

    jar of salsa

    cheddar cheese

    Just layer all the ingredients in a casserole dish like you would a lasagna and bake in the oven until cheese is melted on top. Top with sour cream. Soooooo good!

    1 – 1 ½ lb boneless chicken, cut into bite size chunks

    1 can cream of mushroom soup

    1 - 8 oz carton sour cream

    1 small can chopped Ortega green chiles

    1 sml package flour tortillas, cut or torn in small pieces

    8 oz jalapeno or regular jack cheese, grated

    Cook chicken in skillet with a little water and ½ tsp garlic salt or powder, until no longer pink Remove and reserve.

    In a bowl combine the next four ingredients, plus 6 oz of the cheese, add the chicken. Mix well and place in greased casserole dish. Top with remaining cheese and bake at

    350 F for 1 hour.

    Serving suggestions: Mexicorn and Mexican rice.

    Super Broccoli Casserole

    2 boxes or 1 bag frozen, chopped broccoli, cooked and drained

    2 eggs beaten

    1 sml onion, minced

    1 can cream of mushroom soup

    ¾ cup mayonnaise

    1 cup grated cheddar, jack, or mozzarella cheese

    1 cup cracker crumbs

    ¼ cup butter

    Combine first 6 ingredients, add to buttered 9x11 casserole dish. Sprinkle with cracker crumbs and dot with butter. Bake at 350F for 1 hour.

    Mushroom Chicken

    4 boneless or bone-in chicken b*****s

    1 can cream of mushroom soup

    1-8 oz container of sour cream (regular or light)

    2/3 cup sherry

    1 cup sliced mushrooms (optional)

    1 tsp garlic salt

    pepper to taste

    Mix together everything but the chicken in a bowl. Pour half or the sauce in a casserole dish. Add chicken b*****s and top with remaining sauce. Bake at 350F for 1 hour.

    Serving suggestions: Mashed potatoes with sauce as gravy or red potatoes, vegetable, and Hawaiian rolls. Can be made in crock pot. Add sauce to the pot then add the chicken, coat with remainder of sauce. Cook on low for 3-4 hours.

    Overnight Hashed Brown Potato Casserole

    Ingredients:

    (8 servings)

    2 lb Frozen hashed brown potatoes

    1/4 lb Butter

    1 pt Sour cream

    1 can Mushroom soup

    8 oz Cheddar cheese; shredded

    1 Onion; grated or 1 T. instant minced onion

    3/4 c Milk* (optional)

    Instructions:

    Cut butter into potatoes. Mix rest of ingredients together; pour over top of potatoes. Toss. *1/4 - 3/4 c. milk can be used in place of one-half of the sour cream. It will make a moister casserole, if desired. Bake in a 13x9" pan at 350 for 1/2 hr covered and an additional 1/2 hr. uncovered. I have used Cheddar Cheese soup, but reduce the butter as it will be greasy with both. I also put additional shredded cheese on top during the second half hour of baking. Doubles well. Can be refrigerated overnight after mixing all together.


  7. CHICKEN BROCCOLI CASSEROLE



    4  boneless chicken b*****s  

    broccoli (enough to cover the bottom of casserole)  

    3 cans  low-fat cream of chicken soup  

    1 cup  low-fat Miracle Whip  

    2 tbsp  lemon juice  

    2 1/2 cups  grated cheddar cheese  

    1/4 cup  melted margarine  

    1 cup  bread crumbs  



    Cut chicken b*****s into bite sized pieces and cook thoroughly on frying pan (add pepper to taste).

    In a separate pot, mix together the chicken soup, lemon juice, and Miracle Whip. Heat to blend into a smooth mixture.

    Cut up broccoli and place pieces on the bottom of a 9 by 13 baking pan or casserole dish. Place the cooked chicken pieces on top of the broccoli. Then cover this with the sauce. Top this with the grated cheddar cheese. Finally, top the cheese with the buttered bread crumbs.

    Bake uncovered for 45 minutes to one hour at 350F/180C.
