What are some healthy dinner ideas?

My family is coming over for dinner tomorrow night and I would like to cook something healthy, since i have been trying to lose weight... but I would also like everyone to enjoy it! Everyone in my family is pretty open to new ideas and foods, I just need some help on what to actually, cook! Quick and easy is good, but i will designate an hour to cooking... so anything that takes no more than an hour will be appreciated! (thanks)

Oh, and there are 6 people in my family... so something that will fill that many people up! :)

    Grilled zucchini and grilled garlic bread would be fantastic compliments.

    Fresh fruit for dessert.  melons and strawberries are great.

Try a stir fry...chicken, pork or beef whichever is your family's favorite.  If you have a Wok that is great but if not just use a large saute pan.  Use cooking spray like Pam and cook the meat first.  Cut into bite size pieces.  Use a pre cut vegi, something with water chestnuts, pea pods...Costco has a wonderful one in a large bag in the freezer section.  You can have rice on the side and skip this for yourself.  Just let everyone serve themselves.  Add some crunch noodles and serve green tea and fortune cookies.  No one will know you are dieting because you are controlling the fat and salt content.

I don't know if you have one of these, but they are wonderful--a cast iron grill pan (by Lodge).  It makes grilled food taste just like it was done outdoors on the charcoal grill.  Anyway, I use it all the time and quick tasty things I do for my family and company are grilled center cut pork chops or grilled salmon fillets, and then make a long grain and wild rice side dish--like from Uncle Ben's or Rice a Roni--and then I steam a green veggie--string beans or broccoli.  Total cooking time is less than 30 minutes--the longest thing that cooks it the rice--the meat/fish and veggies take 10-15 mintues.  Pork is low in fat and so is fish.   Also, try cooking with Hillshire Farm Turkey Polska Kielbasa if you like kielbasas.  They are the lowest in fat and are very tasty and you don't even know they're turkey.  You can make a bean, rice and kielbasa dish which is low in fat and has fiber from beans, and have a salad on the side.   Grill up or roast some chicken b*****s and make some rice and salad.

    Easy Chicken Cacciatore

    8 chicken pieces (b*****s are good)

    1/2 tsp. salt

    1/4 tsp. pepper

    1 onion chopped

    3 garlic cloves minced

    1 red peppers chopped

    1/4 lb. mushrooms

    1/2 cup celery chopped

    1/2 tsp. oregano

    2 cups prepared marinara sauce

    Fry chicken until brown.  Transfer to a plate; set aside.

    Heat 1 tsp oil in same skillet.  Add onion and garlic; cook, stirring until softened, about 3 min.  Add peppers, mushrooms, oregano. Cook until softened 5-6 min..  Return chicken to skillet; add sauce and spoon over chicken; bring to a boil.  Simmer, covered, until chicken is cooked through and veggies are tender, about 20 min.

    Serve with whole wheat pasta and a salad.
