What are some healthy(er) chocolate recipes?

I know chocolate is not the most healthy food, but I love it. Does anyone have any lower fat, lower calorie chocolate recipes? I am looking for something easy and creative.

  1. Low Fat Chocolate Chip Cookies:

    INGREDIENTS:

    1/4 cup butter, softened

    1/2 cup sugar

    1/4 cup brown sugar

    1 egg white

    1 tsp vanilla extract

    1 cup all-purpose flour

    1/2 tsp baking soda

    1/4 tsp salt

    1/4 cup cocoa powder

    1/3 cup miniature chocolate chips

    PREPARATION:

    Preheat oven to 375 degrees.

    In a large bowl, beat butter and sugars together with an electric mixer until creamy. Add egg white and vanilla and mix until well blended.

    In a medium bowl, combine flour, baking soda, salt and cocoa powder.

    Gradually add flour mixture to egg and sugar. Use a wooden spoon to work the dough together. Don’t worry if the dough seems a little crumbly at first. Stir in chocolate chips.

    Drop cookie dough by the teaspoonful on to a cookie sheet lined with parchment paper or a silicone mat if you have one.

    Bake for 8-10 minutes. Cool on cookie sheet for 1 minute, then transfer to wire rack to cool completely.

    Makes 30 cookies

    Chocolate Chip Cookies:

    3/4 cup rolled oats

    1 cup whole-wheat flour

    1/2 teaspoon baking soda

    1/2 teaspoon salt

    1/4 cup butter, softened

    1/4 cup canola oil

    1/3 cup granulated sugar

    1/3 cup brown sugar

    1 large egg

    1 teaspoon vanilla extract

    1 cup chocolate chips

    1. Preheat oven to 350°F. Coat 2 baking sheets with cooking spray.

    2. Grind oats in a blender or food processor. Transfer to a medium bowl and stir in flour, baking soda and salt. Beat butter in a large bowl with an electric mixer until fluffy. Add oil, granulated sugar, brown sugar, egg and vanilla; beat until smooth and creamy. With the mixer running, add the dry ingredients, beating on low speed until just combined. Stir in chocolate chips.

    3. Drop the dough by heaping teaspoonfuls, at least 1 inch apart, onto the prepared baking sheets. Bake cookies, 1 sheet at a time, until firm around the edges and golden on top, about 15 minutes. Cool the cookies for 2 minutes on the baking sheets, then transfer to wire racks to cool completely.

    NUTRITION INFORMATION: Per cookie: 99 calories; 5 g fat (2 g sat, 2 g mono); 11 mg cholesterol; 12 g carbohydrate; 1 g protein; 1 g fiber; 64 mg sodium.

    MAKE AHEAD TIP: Store in an airtight container for up to 3 days or in the freezer for up to 2 months.


  2. LOW CALORIE CHOCOLATE CHIP COOKIES

    1 c. sifted flour

    1/2 tsp. baking soda

    1/2 c. butter

    4 tsp. sugar substitute

    1 egg, beaten

    1/2 tsp. vanilla

    1/2 tsp. salt

    1/2 c. semi sweet chocolate chips (3 oz.)

    Sift together the dry ingredients. Cream butter, add sugar substitute, vanilla and eggs, blending well. Add flour mixture and beat well. Stir in the chocolate chips. Drop by level teaspoons on a lightly greased baking sheet. Bake in a moderate oven, 375 degrees, for 10 minutes. Makes 36 cookies, each 48 calories.

Dark chocolate IS good for you (in moderation);  it has lots of antioxidants and less sugar than milk chocolate.   You can melt dark chocolate and dip strawberries, mandarin oranges, dried apricots (or just about anything) into it ......Jello makes some wonderful chocolate pudding snacks in sugar-free or low-fat (refrigerated section) ...  You can make cream puffs and fill them with sugar-free chocolate pudding, drizzle melted dark chocolate or sugar-free chocolate syrup over the top .....  You can mix a thawed container of non-fat Cool Whip with a dry package of sugar-free chocolate pudding mix, or even shaved dark chocolate (add some mini morsels to it too); even add some chopped nuts to it ......You can substitute Splenda for sugar in just about any baking recipe for identical results

  4. I like to whip up a little whipping cream- not the premade kind...

    Then stir in just a touch of splenda.  I shave a little dark chocolate over the top.  YUM.  It looks fancy & tastes good, but not very many calories really and no carbs (diabetic) so I can actually eat it!
