Since its just you and your baby.....I would try a city like Chicago.  Stay downtown as there is lots to do within walking distance of the hotels and if your baby gets cranky, you can easily get back to the hotel.  No mosquitos if you stay in the downtown area!

Try a secluded cove on any one of the Balearic Islands.  Beware of the native Cats!
