  1. JELLO "POKE" CAKE

1 bx. yellow or white cake mix

1 (3 oz.) bx. red jello (any color works)

1 (8 oz.) carton Cool Whip topping

    9 x 13 baking dish

Optional flavor combination: lemon cake mix - orange or lemon jello

    berries for garnish

Bake cake according to package directions. While cake is cooling in its pan, poke holes all over with large fork. Mix jello according to package directions. Do not set.  Drizzle jello liquid over cake. Make sure jello penetrates all holes. Chill several hours or overnight. Frost chilled cake with whipped topping. Top with berries - Serve.

  2. you can make mousse with any instant pudding flavor by pouring half a quart of heavy cream into a stand mixer and whip it a little bit then adding in the dry pudding mix then slowly pouring in the rest of the heavy cream, but don't over whip because it can taste too buttery. white chocolate and chocolate are the best i think. works really well in layered cakes, trifles, etc.
