What are some menu ideas for a morning wedding reception?

I am planning a 9 am church wedding with the reception to follow after in the church family dining room. I need some suggests of a menu to use for a buffet style reception. This is a non-alcohol event and the beverages that I will be offering are coffee, tea, orange juice and a fruit juice punch with a non-alcohol sparkling wine for the toast. I need ideas for the food?

    Hash Brown Casserole

    3 tablespoons butter

    1 small yellow onion, chopped

    4 cups frozen shredded hash browns

    1 pound bulk sausage, mild, hot or sage

    2 1/4 cups whole milk

    8 large eggs

    1 teaspoon salt

    1/4 teaspoon black pepper

    1/4 teaspoon freshly grated nutmeg

    2 tablespoons Dijon mustard

    8 cups cubed French or Italian bread, crusts removed

    2 cups (1/2 pound) grated Cheddar

    2 cups (1/2 pound) freshly grated Parmesan

    Preheat the oven to 350 degrees F.

    Spray a deep 13 by 9-inch casserole dish with vegetable oil cooking spray.

    Melt the butter in a large frying pan. Add the onion and saute over medium-low heat until soft, about 5 minutes. Add the hash browns and break apart. Saute until soft, about 5 minutes.

    In a second frying pan, saute the sausage, breaking apart large clumps. When the sausage is cooked through, remove it from pan.

    In a large mixing bowl, combine the milk, eggs, salt, pepper, nutmeg and mustard, briskly to blend.

    To assemble, spread the onions and hash browns evenly at the bottom of the greased dish. Place the bread cubes evenly on top of hash browns. With a slotted spoon distribute sausage as the third layer. Pour the milk and egg mixture over these layers. Add Parmesan as the next layer, while then adding the Cheddar.

    *Cook's Note: Save a few tablespoons of Cheddar for the last 10 minutes of baking, where you can add a fresh topping of melted Cheddar.

    Bake the casserole, uncovered for 45 to 50 minutes, until puffed and golden brown.

    Omelet station

    Sandwhich station with lunch meats, cheeses, condiments and breads

    Fruit and vegetable platters

    Muffin and bagel trays

    A few cold salads : pasta salad, potato salad, house salad

  4. when i go to these types of events i always see trays of fresh fruit, cream cheese stuffed french toast, pancakes, scrambled eggs, omlette station with guy making them how you want them, muffins, bagels, scones, bacon, sausages and hash browns

  5. In my opinion, I say that you should have lobster with extra lemon. Some pillsbury cinnamon rolls and choc. cookies. Chicken fingers, fried rice, grilled chicken, caesar salad with lettuce, cucumbers, eggs, crispy bacon... and a spray of pineapple juice. White rice, broccoli with cheese, shrimp, some spinich dip with cheese and tortillas and whats a wedding without spaghetti. YUM!

  6. It will be almost lunchtime so you should have brunch items. Include all the normal breakfast stuff but then add in some carving stations, finger sandwiches, cobb or chef salad, things that are a little more hearty.

Quiche might be good, and easy to eat at a buffet (especially if people will be balancing trays on their laps) ..... an omelet chef is always a treat:)  ...  French toast ... waffles (offer whipped cream & strawberries) ... a pancake chef (with a choice of things to put into the pancakes) ... big fruit platters ... platters of Danish, muffins & bagels (for those who don't want a big brunch) .......  There are quite a few flavors of sparkling ciders now too, that you might consider ....  Congratulations!
