    Often called the "Bread of Mexico," the tortilla is the defining element of a Mexican breakfast. Just like people in other countries might put eggs (and bacon!) on toast to create a makeshift breakfast sandwich, the people of Mexico are always eating some rendition of a breakfast burrito, taco or tostada.

    INGREDIENTS:

    4 eggs

    PREPARATION:

    Pre-heat oven to 500 degrees. Coat each tortilla in oil and place on cookie sheet. When oven is ready, cook for approximately 5-10 minutes, depending on how crisp you like your tortillas.

    Heat oil in small frying pan, cook each egg slowly on one side until whites are firm and yolks are runny.

    Salt to taste. Place one egg on each tortilla.

    Heat salsa in the pan on high heat for about 2 minutes or until extremely hot. Pour 1/4 cup over the top of each egg which will further cook the top of the egg. Let it sit for about 1 minute before serving.

  3. I like chorizo (mexican chorizo which is soft and raw) with eggs or migitas which is chopped onion and garlic, torn up corn tortillas, and eggs. Just fry up the onion and garlic, add the tortillas and cook until they are kinda crispy and crack in an egg and cook until it's at your desired doneness.

    It is usually café con leche, a large cup containing a small amount of very strong espresso coffee with a lot of very hot, frothy milk and a sweet roll or magdalenas, lemon-flavored cupcakes or sugary churros.

    Churros are simple fried pastries that look something like a big “French fry,” but taste nothing like one.

    The best way to explain them might be to say that they are the Spanish equivalent of doughnuts

    HERES A GREAT RECIPE:

    INGREDIENTS

    6 ounces chorizo sausage

    8 (6 inch) corn tortillas

    6 eggs

    1/4 cup milk

    1/2 teaspoon pepper

    1/2 teaspoon salt

    1 cup shredded Monterey Jack cheese

    1 dash hot pepper sauce (e.g. Tabasco™), or to taste

    1/2 cup salsa

    DIRECTIONS

    Crumble the sausage into a skillet over medium-high heat. Cook and stir until evenly brown. Set aside.

    Heat one skillet over medium heat, and heat another skillet over high heat. The skillet over high heat is for warming tortillas. In a medium bowl, whisk together the eggs, milk, salt and pepper. Spray the medium heat skillet with some cooking spray, and pour in the eggs. Cook and stir until almost firm. Add the sausage, and continue cooking and stirring until firm.

    Meanwhile, warm tortillas for about 45 seconds per side in the other skillet, so they are hot and crispy on the edges, but still pliable.

    Sprinkle a little shredded cheese onto each tortilla while it is still hot. Top with some of the scrambled egg and sausage, then add hot pepper sauce and salsa to your liking.

  6. one of my fav dishes is "huevos a la Mexicana" what you do is you chop up some tomato,onion,jalapeno,garlic,add some salt and fry up in a skillet with a litttle oil.

    then you heat up oil on a frying pan add a tortilla and right on top crack an egg and cook while flicking oil over the egg with a spatula until the egg is cooked without flipping, then you remove and pour the sauce you made over the top off the egg. this is yummy but takes some practice because the egg tends to run off the tortilla.
