Hola!  I live here in Cabo and can recommend the following.  If you want to stay right in Cabo to be within walking distance of shopping and nightlife, then pick the Riu Palace or Riu Sante Fe for all-inclusive (for people that don't want hassle), for hotels stay at the Melia CSL (for younger crowd), or the Tesoro (which is for budget minded).  You also have the option of the Villa del Arco or Villa Estancia, or the Pueblo Bonito Blanca or Rose.   There is also the Playa Grande (for an older crowd).  

Some of the nicer resorts are located about 10-20 minutes out of town on the corridor and the small town of San jose del cabo.  If you are looking for posh luxury, then maybe consider checking out Dreams, the Marquis, the Westin Regina, the Hilton, Crowne Plaza, Royal Solaris, the Costa Azul, or the Mayan Palace.

When I went to Cabo I stayed at the Melia. We are planning another trip for next year and we are planning to stay at the RIU. Cabo is a beautiful place to visit and you will enjoy it no matter where you go!
