For me the best would be: Moon Palace, Cancun Palace,The Grand Royal Caribean or the Dreams.

We love staying at the Iberostar Resorts in Riviera Maya.  There are 5 resorts all right next to each other each in their own price range with varying amenities.  We like the Paraiso Maya the best but no matter which one you stay at you can use the pools and restaurants in any of the others.  The only restriction is that the kids can't go in the new Grand Paraiso which is adults only.

Riu Caribe.....all inclusive on the calm (water) side of the island.  The food is excellent!!  Location is great, service excellent.......Very nice, clean rooms, would go there again--Except we own two timeshares down there!  www.royalresorts.com

1 hour south of Cancun - Xu Ha - its a Palace Resorts. All Inclusive. Great beach, pool, activities, in the mangroves.  

It is the greatest.  I have been too all most all listed above - Palace resorts are the best.  (Not Cancun Palace).
