What are some of the courses an aircraft 'loadmaster' should undergo so as to have an 'upper hand'

Well you will be doing a lot of weight and balance calculations.  I am working on my A&P and I found that it was great having the knowledge of math and physics.

I've had university level physics but a good high school physics class would be beneficial.  

And of coures math.  Take it up to whatever level you can get.  The math for weight and balance isn't complicated but having worked with more advanced math will give you that edge you are looking for.
