I made a corn casserole the other day that was super easy and super good. It was by Paula Deen. Here's the recipe copied from Paula's website. What's your favorite easy recipe?

1 15 1/4-ounce can whole kernel corn, drained

1 14 3/4-ounce can cream-style corn

1 8-ounce package corn muffin mix (recommended Jiffy)

1 cup sour cream

1/2 cup (1 stick) butter, melted

Shredded Medium Cheddar Cheese

Directions:

In a large bowl, stir together the two cans of corn, corn muffin mix, sour cream, and butter. Pour into a greased casserole. Bake at 350 degrees for 40 to 45 minutes, or until golden brown. Top with generous amount of cheddar cheese and return to oven for another 5 minutes until cheese is melted.

  1. cheesy potatoes!

    1 can of cream of mushroom

    1 can cream of celery

    16 oz sour cream

    1 stick melted butter

    little bit of diced onion

    1 lb of frozen hashbrown potatoes[can be shoestring or little squares, just make sure they are plain with nothing in them]

    1 block mild cheddar cheese, grated

    mix all the ingredients except the cheese in a large bowl

    put the mixture into a casserole dish and put all the cheese on top of it.

    bake at 350 for about an hour and a half.

    so easy and SO good!

  3. Beer Roast!

    sirloin tip roast

    meat tenderizer

    soy sauce

    dark beer (Amber Bock works well)

    potatoes

    onions

    carrots

    Poke holes in all sides of the roast with a fork.  Sprinkle all over with tenderizer, and lightly coat with soy sauce.  Place roast in a crock pot and cover with beer.  Usually takes about 3 bottles.  Let cook all day long.  About an hour before you're ready to eat, add the potatoes, carrots and onions.  Cook them for about an hour in the beer with the meat and serve!

    I love this roast because the meat gets sooo tender it just breaks off in big hunks.  And the beer gives it such a great flavor!

    Easy Salmon Cakes

    INGREDIENTS (Nutrition)

        * 2 cups fresh bread crumbs

        * 2 eggs, beaten

        * 1/4 cup fresh parsley, chopped

        * 1/4 cup chopped green onions

        * 2 teaspoons minced fresh dill weed

        * 1 teaspoon fresh lemon juice

        * 1/4 teaspoon ground black pepper

        * 1 (14.75 ounce) can salmon, drained

        * 2 tablespoons butter

    DIRECTIONS

       1. In a large mixing bowl, place 1 1/2 cups bread crumbs. Set aside remaining 1/2 cup. Add eggs, parsley, green onions, dill weed, lemon juice and black pepper. Mix well.

       2. Add salmon and mix with hands, breaking up salmon into small pieces. Form into 8 patties; each about 1/2 inch thick.

       3. Place remaining 1/2 cup bread crumbs on a plate and dip both sides of the salmon cakes into crumbs.

       4. In a large skillet, melt butter. Fry salmon cakes over medium heat for about 3 minutes or until golden brown and crisp. Turn, adding more butter if necessary, and fry about 3 minutes on other side.
