  1. Yusef Komunyakaa did an entire anthology on jazz poetry. There's also the magazine "Brilliant Corners" which focuses on jazz literature:

    You may also want to do some searches for "ekphrastic verse" which is essentially poetry written in response to art. This page has some decent examples, a discussion and a solid reading list:

  2. Potty-guy had a very good answer. The other that comes to mind is John Ashberry (and really, any members of the New York School of poetry--a movement, not a physical school.) He's also a noted art critic and along with other members of the movement, transformed the way many people think about the intertwining of art and literature.

    The idea you are getting at is a relatively new one called "synaesthesia." This is the interpretation of one sense through another. There are people who hear a musical note and literally "see" a color. It's more complicated than I'll get into here, but a very fascinating area of research in psychology and literature.
