It depends on what part of the country you're going to.  In Santiago, I'd check out Cerro San Cristobal (it's got a statue of the Virgin Mary, not as big as the Christ statue in Rio de Janeiro, but still impressive and a nice view of all Santiago) for sure.  Santa Lucia is a good spot downtown for souveniers and such, be prepared to bargain though!  Those are my top 2, outside of Santiago it depends on whether you go north or south....
