What are some quick and easy vegan dinners for two???

Im vegan. My fall semester starts Monday and I would like to plan some dinners for my hubby and I for next week. I need new ideas for meals that are quick and easy. I want things that either one of us can make depending on who gets home first.

  1. Rice and Beans

    Stir fry veggies over brown rice

    Soup and salad

    Black bean burritos

    veggie tacos

  3. Get the prewashed, prechopped bag of stir fry veggies, add tofu or tempeh or seitan or some other vegetarian protein, stir fry with sesame oil, soy sauce, garlic and a little ginger.  Serve with brown rice or soba noodles.

    Delicious!

    I also love falafel pitas.  Buy the dry falafel mix.  Add water and you get the "dough."  Make it into little balls. I don't deep fry it, just cook it in a little oil (like a soy patty, only little tiny ones).  Put in a whole wheat pita with hummus, lettuce, pickled beets, tomatoes and tahini.  

    Wow, I'm hungry now!

    These are all very easy to make and delicious as well :)

  6. Cucumber-Radish Salad:

    1 cucumber, peeled and sliced thinly

    about 8 red radishes, sliced thinly

    1 part vinegar

    1 part soy sauce or tamari

    1 part water

    A few drops sesame oil

    Some cayenne or hot sauce (optional)

    Sesame seeds (for garnish)

    Mix all ingredients except cucumber and radishes in a bowl.  Place cucumber and radish slices in a plastic bag and pour marinade over. Shake then seal the bag and let sit in the fridge for about an hour. Serve with sesame seeds

    Peppers and Onions a la Soy Sausage

    Saute a chopped yellow onion and large green bell pepper in some oil over medium or med. high heat.  Add some chopped soy sausage or other fake meat products.  Season with salt, pepper, and red pepper flakes,  Eat by itself or put in tortilla or hot dog bun with vegan mayo and mustard.  

  7. Check out "Conveniently Vegan," which uses ingredients found at most conventional grocery stores.  Some of the dishes may make for more than two people, but that's what leftovers are for!  But those certainly are fairly quick and easy.

    Also make some casseroles, stews, and soups on the weekend and freeze portions for during the week.  That way you can take it out of the freezer the night before and wait until both of you are home to warm it up.
