    My kids loved to bake and here's one they used to make...it's yummy !

    Banana Chocolate Chip Mini Muffins

    RECIPE INGREDIENTS:

    1 1/2 cups all-purpose flour

    2/3 cup sugar

    1 1/2 teaspoons baking powder

    1/4 teaspoon salt

    1 cup mashed very ripe bananas (about 2 large or 3 medium)

    1 large egg

    1/4 cup (1/2 stick) butter, melted

    1/4 cup fat free or light sour cream

    2 teaspoons vanilla extract

    1/4 cup low-fat milk

    1/2 cup mini semisweet chocolate chips

    1. Heat the oven to 350° F.

    2. Line a mini muffin pan (ours made muffins 1 3/4 inches in diameter) with bake cups or lightly coat the muffin cups with cooking spray.

    3. In a medium-size bowl, combine the flour, sugar, baking powder, and salt and stir with a fork to blend.

    4. In a mixing bowl, combine the mashed bananas, egg, melted butter, sour cream, vanilla extract, and milk. Beat on medium until well blended. Reduce the speed to low and blend in the dry ingredients

    (do not over mix). Stir in the mini chocolate chips.

    5. Fill each muffin cup with 1 level tablespoon of batter. Bake the muffins for about 20 minutes or until the tops are golden and a toothpick comes out with some melted chocolate but no crumbs.

    6. Transfer the muffins to a rack to cool. Repeat with the remaining batter. Makes 36 mini muffins.


  2. Try allrecipes.com. Baking is much different then just cooking.  When baking you need to be very accurate with your measurements. But it is sooooo yummy!!!!!

  3. Mandarin orange cake

    INGREDIENTS (Nutrition)

    1 (18.25 ounce) package yellow cake mix

    4 eggs

    1 cup vegetable oil

    1 (11 ounce) can mandarin orange segments

    1 (8 ounce) container frozen whipped topping, thawed

    1 (20 ounce) can crushed pineapple with juice

    1 (3.5 ounce) package instant vanilla pudding mix

    DIRECTIONS

    Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.

    In a large bowl, combine cake mix, eggs, oil and mandarin oranges with juice. Beat until smooth. Pour batter into prepared pan.

    Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

    To make the topping: In a large bowl, beat together whipped topping, pineapple with juice and dry pudding mix until blended. Spread on cake

  4. Chocolate Lava Muffins

    8 ounces semisweet chocolate chips

    1 stick butter

    1/2 teaspoon vanilla extract

    1/2 cup sugar

    3 tablespoons flour

    1/4 teaspoon salt

    4 eggs

    Butter, to coat muffin tin

    1 tablespoon cocoa powder

    Preheat the oven to 375 degrees F.

    Place a small metal bowl over a saucepan with simmering water. Melt the chocolate and butter in the bowl. Stir in vanilla.  (You can also melt the chocolate in the microwave; stirring it about every 45 seconds, about 2 ½ min total.

    In a large mixing bowl, combine sugar, flour and salt. Sift these into the chocolate and mix well with electric hand mixer. Add eggs one at time, fully incorporating each egg before adding the next. Beat at high until batter is creamy and lightens in color, approximately 4 minutes. Chill mixture.

    Coat the top and each cup of the muffin tin with butter. Dust with the cocoa powder and shake out excess. Spoon mixture into pan using a 4-ounce scoop or ladle. Bake for 10 to 11 minutes. Outsides should be cake-like and centers should be gooey.

    Peach Muffins

    Ingredients:

    1/4 cup melted margarine

    3/4 cup sugar

    2 eggs

    1 cup milk

    1 tablespoon vanilla

    1 ¼ cup diced fresh or canned peaches in light syrup, drained

    2 1/4 cups flour

    1 T baking powder

    1/2 tsp. baking soda

    ¼ tsp. cinnamon

    1/4 tsp. nutmeg

    Cinnamon Streusel Topping

    • 2 tablespoons light brown sugar, firmly packed

    • 2 ½  teaspoons all-purpose flour

    • 1/8 teaspoon cinnamon

    • ¾   cup chopped walnuts

    Directions:

    Preheat oven to 375 degrees F. Thoroughly mix the margarine, sugar, eggs, milk and vanilla. Add the dry ingredients to the egg mixture alternately with the peaches. Thoroughly mix batter until all ingredients are fully incorporated. Grease 10-12 regular size muffin pan sections. Fill each muffin section 3/4 full with the batter. Bake 25-35 minutes until firm to touch or until an inserted toothpick comes out clean.

    Puppy Chow aka Monkey Munch

    9 cups Chex® cereal (any variety)

    1 cup semisweet chocolate chips

    1/2 cup peanut butter

    1/4 cup butter or margarine

    1 teaspoon vanilla

    1 1/2 cups powdered sugar

    -1. Stove-Top Directions: Into large bowl, measure cereal; set aside. In 1-quart saucepan, heat chocolate chips, peanut butter and butter over low heat, stirring frequently, until melted. Remove from heat; stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag. Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator.

    1. Into large bowl, measure cereal; set aside.

    2. In 1-quart microwavable bowl, stir together chocolate chips, peanut butter and butter. Microwave uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.

    3. Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator.

    BAKED ONION RINGS

    2 egg whites

    1/2 tsp. salt

    1/8 tsp. pepper

    1/2 lg. sweet yellow onion, cut into rings

    1/3 cup dry bread crumbs

    Combine egg white, salt and pepper in bowl; mix well. Dip onion rings into egg mixture. Coat with bread crumbs. Place in single layer on baking sheet. Bake 450 degrees for 10 minutes or until golden brown.

    Chocolate Crackled Cookies

    INGREDIENTS

    1 (18.25 ounce) package devil's food cake mix

    1/2 cup butter flavored shortening

    1 tablespoon water

    2 eggs

    1 cup confectioners' sugar

    DIRECTIONS

    Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.

    In a medium bowl, beat together the shortening, water, and eggs. Add the cake mix, and mix until smooth.

    Roll the dough into walnut sized balls, and roll the balls in the confectioners' sugar. Place cookies 2 inches apart on the prepared cookie sheets. Bake for 10 minutes in the preheated oven. These are best served the same day, as the confectioners' sugar becomes absorbed by the cookie giving it a pasty look. This can be fixed by dusting the cookies with sugar again.
