My garden just sprouted some tomatoes and I was wondering what are some good recipes using garden fresh tomatoes.

  1. Cherry tomatoes with a seasoned cream cheese stuffing.

    Ingredients:

    36 cherry tomatoes

    1 package (8oz) cream cheese, softened

    1 tablespoon dry Italian salad dressing mix

    2 tablespoons milk

    3 tablespoons chopped fresh parsley

    Preparation:

    Place tomatoes stem-side down; cut an x in each, to about 1/4-inch from the bottom of each tomato. Spread carefully to open the wedges without breaking. In a small bowl, combine cream cheese, dressing mix, and milk. Blend well. Fill each tomato with about 1 teaspoon of the cream cheese mixture. Sprinkle tops with chopped parsley. Refrigerate for up to 6 hours before serving.

  3. This is my all time favorite salad...I have made it with halved Cherry tomatoes...which tend to hold up better than just sliced tomatoes...

    this is more of a marinated salad..I serve it on a platter .. pour the vinaigrette over then sprinkle with fresh parsly ..

    Cucumber and Tomato salad.

    3 cucumbers

    3 vine ripe tomatoes

    1/4 cup salt

    Peel cucumbers and cut length wise.Remove seeds with small spoon.slice and place in colander add salt and toss.place colander over large bowl and let "Sweat" for 2 hours.

    Dressing

    1/4 cup vinegar

    salt and pepper to taste

    3/4 cups oil

    1 glove garlic minced

    1 half small onion minced

    1 tsp parsley

    put vinegar in large bowl add salt and pepper.whisk till salt is dissolved add remaining ingredients and blend well.add cucumbers and sliced tomatoes toss well. let set for 2 hours refrigerated.


  4. Slice them up and place them in a Grilled cheese sandwich .Make some fresh salsa too, Casseroles are good too.

  5. for a simple appetizer...bruschetta =)

    very simple and delicious and it has a very presentable appearance.

    mix some olive oil, parsley, chopped tomatoes, parmesan, italian seasoning, basil, oregano, and pepper together and let the mixture sit for 20 minutes at least to let the flavours mix together.

    then top the mixture onto some freshly light-toasted and sliced baguette pieces and serve =)

    if you want, you can add some parmesan on top and toast instead for the melted cheese =)

  6. 1) insalata caprese is a simple salad: tomatoes, fresh mozzarella (like the balls, not the block), and fresh basil leaves (not dried). then you put salt, pepper, and extra virgin olive oil on top. that's it. nothing more, nothing less.

    2) if you want to save yourself the trouble and money, cut the tomatoes in half, sprinkle with salt, pepper, and italian seasoning if you have it. pour either balsamic vinegar or extra virgin olive oil (or both) on top.

    3) use the recipe above, put it all in a small pot/pan, stew it on low heat, kind of mashing it while it cooks. just don't use balsamic vinegar if ur gonna do that.

  7. Cherry Tomatoes and Olive Salad  :Prep Time: 5 minutes

    2 tablespoons extra-virgin olive oil

    1 tablespoon red wine vinegar

    1 teaspoon Italian dressing mix (recommended: Good Seasons)

    1 pint cherry tomatoes, sliced in 1/2

    1 (15-ounce) can pitted black olives

    4 large fresh basil leaves, finely chopped

    2 scallions, cut in 1/2-inch pieces

    In a medium bowl whisk together olive oil, vinegar and dressing mix.

    Add cherry tomatoes, olives, basil and sliced scallions to bowl. Toss to combine.
