  5. I've had sushi with grilled steak in it.  It's not traditional, but it can be good.  Of course, there are other types of seafood:  Shrimp, crab.  Some rolls even use deep fried shrimp or softshell crab.

    we also change up the veggies--portobello shrooms, cucumber,carrots, avocado, sprouts, etc.

  7. I assume you want maki sushi--the kind with rice and other ingredients (vegetables and raw fish) rolled in nori (seaweed/algae) wrappers and sliced into bite sized circles. I much prefer authentic varieties, but when my kids were little I sold them on sushi by starting with ingredients they were familiar with. There were pizza rolls with peperoni and mozzerella (string cheese) in the center and served with marinara for dipping. I also made ham and cheddar rolls, bacon lettuce and tomato rolls, bacon egg and cheese rolls, etc. Think about things you might put into a sandwich or a particular recipe you like, and recreate those flavors in the form of maki sushi. I suggest you try soy wrappers instead of nori, because the "fishy" nori taste isn't compatible with American ingredients. You can order those on-line if you can't find them in your grocery store or foreign foods market. They even come in fun colors like orange and purple. Now my kids are 10, 11, and 16. They've outgrown "kiddy sushi" and go for nori and raw fish!
