  1. Lots of Italian cooking lore on the Internet. The idea that tomato sauce should be cooked for hours is erroneous. The best way to eat pasta with sauce is with tomato and garlic sauteed with olive oil, toss with cooked pasta, add Parmesan cheese and fresh herbs, basil preferred. Tomato should be blanched,peeled and seeds removed before cooking. Sicilian lunch recipe.

    - soups like Minestrone

    - Pasta or Ravioli (homemade with many delicious fillings)

    - Risotti's eg. ai funghi porcini, mare etc.

    - Polenta

    - meat/fish either barbecued or with a nice red/white wine gravy

    - vegetables any style often fried too

    - and cheese, of course...

    Italians typically cook with fresh ingrediants. Flavors and ingrediants are sooo inportant in italian cooking. You should see my grandma when she dosnt have fresh herbs! just picture an old italian lady freaking out at you after drinking a little bit to much

You may find this hard to understand but in Italy we do not use alot of sauce on our pasta, Goes back to olden days that , "Only poor folks used alot of sauce, because they couldn't afford pasta" As  Mia momma always said.  As with any area in the world cooking methods change from region to region. Southern Italy is more sauce and vegetables. Northern Italy tends to cater to  visitors with more meat and creamy sauces. Central Italy, ahhh my favorite are simple, fresh markets and relaxed cooking methods where ingredients are combined and simmered all day till perfection and tossed with pasta to coat ( OK so I am bias, lol )

  6. cooking methods are the following: we use olive oil as grese (butter is not very used), garlic andonions as base for pasta sauces and recipes where we need a sauce to be...to cook we use to grill, steam, and cook in a pan with olive oil (just a bit  at the bottom, i'm not saying frying)..these are the most used. as ingredients, we use a lot of tomatoes (either fresh or in sauce), vegetables like carrots,potatoes,aubergines,artichockes,... more than the others. italian cuisine is most likely to simple, quick recipes than long and elaborate ones

  8. fresh ingredients are key to italian cooking. pizza is a very popular meal in parts of italy. when we make pizza at my house, we put the sauce, cheese and topings on top of the dough and then put it in the oven. the oven should be set at 550. the residents of calabria--southern italy--cook a lot of pasta, and chicken. also since they do all of their own farming, they use many different kinds of fresh vegetables.
