  1. Tete de veau= veal head

    Ris de veau=Sweetbreads=some gland in a calve's head or neck that has nothing to do with bread

    Foie gras de canard=duck liver


  2. "Tripe a la mode de Caen" - tripe in an apple and Calvados sauce.

    "Anguille" - eel - very tasty.

    "Cerveaux" - brains. Yumm.
