What are some vegetarian foods that aren't loaded with carbs?

I've been a vegetarian for about three weeks and things are going well so far. I do it for animal reasons, not for health reasons, HOWEVER, I also want to keep my weight in mind. And not eating meat has left me eating a lot of food loaded with carbohydrates. It's been making me gain weight. Can anyone offer any suggestions for meals that I can eat that aren't as fattening?

  1. well, carbs are good for you, but in a very small amount. try eating meals with leafy greens and lots of fruit. if you have a huge sweet tooth, i would reccommend eating an asian salad. all you need is oranges, apples, raspberry vinegarette, lettuce, cabbage, and whatever else you want to put on it. if you have more of a traditional american type of appetite, i would reccommend eating a cesar salad or maybe even a veggie burger (like morning star or boca) and instead of a bun use lettuce. here are a couple of sites i found with recipies on how to make delicious vegetarian meals:

  2. I was a vegetarian carb junkie for years and I know exactly what you are going through. I don't think that carbs are as much of your problem as you think.  My guess is that you don't eat enough fruits and veggies and turn to chips, bread, and other kinds of things for food. I know that going from carbs to fruits and veggies is hard, but if you slowly incorporate it into your diet you will feel better, look fantastic, and you'll love it.  And the good part is that you can eat as much fruits and veggies as you want without worrying about calories (with the exception of a few very high calorie things like avocados, etc).  Lay low on the white bread, cheese, and high calorie/carb filled junk and embrace the world of natural, whole foods.  Good luck, I know you can do it!

  3. lots and lots of and LOTS of fruits and veggies. maybe a salad for lunch and dinner and a large smoothie for breakfast (smoothies can have a lot of calories, so be careful with the ingredients), along with other foods.

    in a salad, you really dont need to add dressing at all (its high in carbs). you can make an amazing salad without dressing. in addition to whatever else you would want to add to a salad, try adding feta cheese(without rennet of course), olives, pepperoncinis, sliced bell peppers, mushrooms, and a spoonful or two of pine nuts.

    fruit can get expensive so maybe you could try growing your own. raspberries, plums, blueberries, and many others are easy to grow.

  4. Well first of all, simply stop having the white breads and pasta. If you do, get a whole wheat not regular. Try grilling Portabella mushrooms with a little balsamic vinegar, top it with some sauteed onions and roasted. grilled red bell pepper, lettuce, sprouts, grilled tomato on a whole wheat or 7 grain bun with provolone cheese and a basil mayonnaise. You have to get creative with fruits, vegetables, possibly soy products, cheeses, salads, salads with fruits and nuts with vinaigrette dressings, vegetables steamed or baked with fresh herbs and garlic. Tomatoes and Portabellas can take the place of meats in some cases like sandwiches and pastas, and you can grill just about every veg. grrrrreat corn, onions, asparagus, tomatoes, bell peppers, even citrus limes, oranges and lemons to squeeze on your veg.  

  5. plain ole veggies--you can also eat nuts and have dairy--those have protein and fats but those are needed by the body too...Try to avoid eating tons of bread--Being a vegetarian is easier if you are into dairy--if you aren't--your choices are harder...

    you can try eating potatoes in a healthy form--like a baked potao instead of fries, etc...

  6. To the person above, how is it impossible to eat low carb and be a vegetarian?? It is very possible, eat vegetable stir fries! yum i put some grilled zucchini, mushrooms and bell peppers over a little white rice last night. It was great! Coking for yourself is obviously less convenient, however than going to the food court and getting spaghetti...

  7. Nuts, tofu, TVP, legumes (although it has a fair amount of carbs, the fiber compensates with it, so no worries), soy products, soy milk, veggies (nothing to worry with the carbs in this since they are all complex carbs and loaded with fibers).
