What are some yummy potluck dishes with minimal ingredients?

Preferably vegan, but it's the minimal ingredient thing that's important. We have no fresh food in our house, and I need something for a potluck tomorrow! I can turn vegetarian dishes vegan, but please don't be one of the jerks who suggests "veal" or whatever. EVERYONE does that, not funny.

  1. Green Bean Casserole:

    2 cans of cut green beans---dump in casserole dish

    1 big can cream of mushroom soup---spread evenly over GB

    1 large container Durkee fried onions---sprinkle over top

    bake in oven at 350 for something like 20 min. or until brown

    You're done!


  2. Here is a recipe for Vegan Foo Young opposed to Egg Foo Young.  

    It's very simple - tofu, seasoning, corn meal, grated carrot, sesame seeds.

  3. PIZZA! It's so easy to make from scratch. You would be very surprised.-but if you have no fresh veggies i would recommend that you make a trip to the store.

  4. PICO DE GALLO

    dice and mix roma tomatoes, onion, garlic, cilantro, jalapeno, and any other veggie you wish (I like cucumber) all together with a little lime juice, salt, and pepper to taste. perfect as a topping for a salad, tacos, or just to dig in with tortilla chips! tastes better after being refrigerated for at least an hour.

  5. Bean salad.  Toss several varieties of canned beans together, add chopped onion, olives, canned baby corn, whatever.  Then dress with an Italian style vinaigrette.

  6. rice, tinned tomatoes, stock cubes,ramen noodles without the flavouring.

    boil the rice till tender, drain and mix with tomatoes (pref with a flavouring in the tin) then add a veg stock cube. serve with noodles.

  7. I'm totally not vegan, however I know of a really good dish that can be served warm or cold that's quick and affordable and can be made with most of the stuff you have in your pantry.  

    4 Bean Salad!!!  

    Use canned:

    Garbonzo beans

    red kidney beans

    green beans

    black beans

    or any other beans you may have

    and mix with:

    Balsamic Vinegar

    Honey

    Spicy Mustard

    Olive Oil

    Salt and Pepper

    The measurements for the dressing depend on how much you want to make, but I'd start off with roughly 2 tbsp of vinegar, oil, and honey, 1 tbsp of mustard, and salt and pepper to taste.  You can always add more of each ingredient if needed.  Hope this helps!

  8. Everyone loves this- cheap and easy too!

    6 cups cooked rice or cous cous

    1 can drained and rinsed black beans

    1 can drained whole kernal corn

    1 cup salsa

    1/2  cup miracle whip, or vegan mayo

    1 cup chopped cilantro

    Combine and chill for at least an hour before serving!

  9. I have a recipe for a mock chopped liver that I adapted from "How it All Vegan!"  Take an 8-oz container of mushrooms and a medium sized onion and chop up.  Mince one or two garlic cloves.  Saute mushrooms, onion, and garlic until tender.  Put in a blender with a handful of walnuts and some salt and pepper and blend until smooth.

    Serve with rice crackers.

    This is best when you can let it sit overnight to let the flavors blend.
