What are the 'must see' places to visit and eat/drink in the South of France?

Question

Me and my other half are staying in Cannes from Friday for a week, which are the 'must see' places and best places to eat/drink out etc. We have a car so can travel around easily.

Monaco, Monte Carlo and Nice are all interesting places to see and all have a variety of good restaurants.  You could also get the train between places if you wanted a break from driving.

I would drive up to Arles and stop at some small villages to get the feel for France's back roads.
