    No others will do.

    The best way to roast them is par boil them first then roast in duck or goose fat.

    waxy new potatoes like charlotte roast nicely with cumin seeds for a different indian-style meal.

  4. Red,or the Gold potato's,you want firm potato's that hold together.

Russets.  They are the brown skinned ones that when you look at them, you recognize them as "potatoes".  Wash them really, really well; no soap.  Rinse and either put them in the oven with or without foil all around them.  Bake at 350 with or without anything else in the oven.  To speed up the process you can crank it up to 400.  It takes about an hour to bake, depending on the size.  Then take the foil off and slice the skin open with a knife.  The russet's flesh is mealy - and this is a good thing.  It sorta flakes and has a little bit of a dry textue.  You can add anything you want, but a little salt, pepper and butter are the best.  Yum, yum.  The texture and mild, sweet taste of a baked russet cannot be beat!

  6. Baby new potatoes.  In large frying pan, roast in butter, toss occasionally.    Add salt and pepper to taste.  When cooked, toss with chopped dill.

  9. I love to roast fingerling potatoes whole, if you can find them.  They roast fairly quickly, just toss them in olive oil and a little salt and pepper and throw them in a 400 degree oven.  Their skin gets crispy and the potato inside gets soft and slightly sweet...so good!
