What are the differences between cheddar cheeses?

I mean like Wisconsin, New York, Vermont. I understand the sharpness, but in the store there are cheddars from different places. What makes them different?

  1. Mild Cheddar, sharp, extra sharp, eh?

    With some it depends on the 'recipe' they use, what the cows eat and the techniques used in the making.

    Mild Cheddar is aged, left to sit in a controlled atmosphere environment for a short time. When the right recipe is used they can mature it for longer and when left for a year or two the Cheddar gets a sharper more pronounced flava!

  2. I think the difference is just in where they are made, thus the name difference.

      Try them until you find your favorite.  

      I LOVE Sharp cheddar cheese.  YUMMY!  

  3. Cattle that graze in different pastures produce milk that has different flavours.  So regional cheeses will have slightly different notes.
